For the period sweet tooth (pt. 1)
« on: May 06, 2005, 01:48:10 PM »
Here are a couple of recipes for the frontier sweet tooth;

Rock Candy
1 3/4 cup sugar
1/8 tsp. salt
1/2 cup water
1/2 cup light corn syrup
* Vegetable food coloring
**Flavoring oil

* Use a color suitable for the flavoring oil you choose.
**For this recipe you may choose anyone of the following: 1/4 tsp. oil
of peppermint; or 1/4 tsp. cinnamon oil; or 1 tsp. oil of orange or lime or wintergreen; or
1/8th tsp. oil of anise. (You can intensify fruit flavors by adding one teaspoon of powdered
citric acid.) In a medium-size heavy saucepan combine sugar, water, corn syrup and salt. Stir until sugar dissolves. Then cover pan and bring to a vigorous boil. Remove lid and insert candy thermometer and cook until temperature reaches 250°F. Add food coloring, stirring until thoroughly mixed. Continue cooking until temperature reaches 300°F. Remove pan from heat and let cool about three minutes. Add flavoring oil, mixing well. Cover pan and let cool about five minutes. Pour into  greased molds (for lollypops) or onto marble slab or into greased shallow pan. As soon as cool enough to handle, cut into squares with scissors. Can be rolled into balls or shapes.

Lollypops
1 cup sugar
1/3 cup light corn syrup
1/8 tsp. salt
5-6 drops oil of peppermint
2/3 cup water
Red food coloring

Combine first four ingredients in a heavy saucepan and stir until sugar dissolves. Cook over low heat, stirring constantly until mixture begins to boil. Continue boiling and do not stir until syrup registers 310°F. on your candy thermometer. Remove pan from heat and quickly wipe crystals from sides of pan with a damp cloth. Stir in peppermint oil and 2-3 drops of red food coloring. Drop mixture by tablespoonsful onto greased baking sheet. Before candy becomes set, insert a wooden skewer into each round. Use a metal spatula to loosen lollypops from surface.
