Prime Beef

My neighbor had the chance to aquire some prime beef new york steaks and he gave me one. The wife and I q'ed it with just a little salt and pepper. It was the best steak I have ever had bar none. If anyone ever wants to give you a prime beef steak don't turn it down. We q'ed rare and with just some sliced avocado and home grown tomato and a little  cab to go with it!!!!!!!!!!!!!!!!.

  Creek, I know what you're saying, I was a meat buyer for years, 35 years ago 25% of all the beef grown was graded Prime, we were a gourmet market company back then, and I bought all the best steer beef I could find, even show beef, because of all complaints about fat, the growers started growing their beef leaner, and now Prime Beef is down to 1 to 1 1/2 % of all the beef grown, it's really too bad, some people that haven't ever had a chance to try it, would feel just like you, without the fat or marbling beef doesn't have that great flavor and tenderness. at last count we were selling Prime New York steak for $26.00 a pound.

Yea, I raised beef on a feed lot. Had around 20 head average. My 2nd wife loved the meat, til my work took me out of town, weeks at a time. Her 17 and 18 year old boys thought that was to much work for them to handle, so I sold off my cattle, now she complains about the price and poor quality of the store bought meat. I just can't win. ;D

The local Harris Teeter is carrying some prime sirloin now.  At $5.99, $4.99 on sale, it beats that pants off the rib eyes they sell right next to it.

Grew up on a feedlot and there is nothing finer than good corn fed, well marbled Nebraska beef. Some of the best steak houses in the U.S were right next door to the stockyards in Omaha. Alas, that is all history now. :'(

Yup, folks around here think USDA Choice is a good thing....I grew up up in the Central valley where meat and veggies was raized. We had our own beef a couple of times (course my daddy gave me hell for ridin it. He was sure I cost him a couple of lbs of good meat, and I probably did.)

We have a couple of markets down here that sell Harris Ranch meat, and that is about the best you can hope to find locally.

Recently went to one of the local major chain super markets the other day. While trying to pick out some ground beef, I noticed that all of the packages were marked; USA/Canada/Mexico. Having a good idea what it meant, I asked one of the meat dept. guys to be sure. His response was, "oh it's North American meat; it can come from any one of those countries". Sorry bubba but I don't do mexican meat if I can help it. Needless to say, I am a bit more observant since that experience.

I buy my hamburger (what little I use) at a certain store and only certain packages, I trust what Mike grinds.  ;D  (One should always have a friendly butcher that you know on a first name basis.)

I had some mighty fine BBQ pork this noon!
