Frozen Dogs and Brats
« on: September 27, 2008, 05:21:03 AM »
Every time I just toss some frozen dogs or brats on the grill, they always seem a little dry when done, a little tough.........

I have recently switched to tossing them in boiling water first. Just enough to get them unfrozen, and soften up the skin a bit..

Then toss them on to a hot "Q" grill.......

They seem to be way juicer and way tastier.......

Beer's a tenderizing agent and can be used to baste steaks or chicken, as well. I never thought of boiling dogs in it but that's a good idea. Thanks, I'll try that next time I need to defrost some.

OK. I'm convinced. All of Wisconsin can't be wrong. Besides, it sounds like a good idea. :D

Don't have beer in the house, but I know people that swear by it. I always boil brats in water before grilling or browning in a skillet.

I've never boiled brats or such in anything before. Sounds like I've been missing something. That's OK. I can make up for it. Does the practice of boiling them in water or whatever plump them up or something? I seem to recall hot dogs get about twice their size that way.

Pard........
Plumper is a difficult condition to define.......
I guess yes, It seems to me that they are plumper at serving time, If I boil those dogs and brats before grilling, in water.......
I don't see the gain in boiling them in beer, although lots of folks do................

I leave them on the grill only as long as it takes to get some grill marks........
They are really boiled......Way tastier..........

Be very cautious with the boiling..
If you boil them so hard that you have a fat scum on the water, you've blown it, boiled them too much.......
That scum on your boiling water is flavor lost...........

To Paraphrase a Popular tune............
"From the day I left Milwaukee, Pittsburg and Port O' Prince............."

I see no gain in beer instead of water.............Water seems to work fine.........

I can either try it both ways or check with the litte German lady at the deli in Marina. I'll just try the beer first, probably. I use it for cooking in a number of things, anyway. Some things really come out superior with it.

Never had that one, have had the other three.  Took a couple years to get rid of the 6 pack of Texas Pride, no one wanted a 2nd one. ;D

I boiled some sausages (didn't have brats, but had some that were close) in beer tonight and grilled 'em after. They were really good. A little more tender than normal and better flavor. It wasn't a Texas beer, but they were still good.

As to beer in chili, I wouldn't make it any other way. Darn tootin'. :D
