Johnny cakes
« on: August 23, 2008, 11:03:11 PM »
Does anybody know the original ingrediants of johnny cakes. I am talking about the flat breads that the confederate solders carried with them during the cival war. I would imagine that they were not much different than the hoe cakes that the slaves made during meal time in the fields. My guess at this would be corn meal water and some sort of grease and then fried.

Most time just cornmeal, salt  and water, then baked, just hardtack made out of cornmeal instead of flour.  Lard will turn rancid over time so it is left out.  BTW be careful, those things can be hard on the digestive system as well as teeth.
