Some food pictures from Rock Creek Station

Well when we got there Fri afternoon about 2 pm, later than planned, we needed a fairly fast meal for the folks who came down early.  Remember, we had to unloaded and get a fire started.

We ate at 7pm to let the stragglers get in.

I got my meat hammer out and pounded some round steak, dipped it in egg and milk and then dredged it in flour.  Got my 20" skillet out and heated up some lard and went to work.



As they got done I put them in a warm oven. 



Notice a few got a little more done than I wanted, with everything else in ovens, I didn't have enough, coals for the skillet so I had to use the main fire, try cooking sometime on yer stove with it up way over high and no control, we moved the skillet on and off a couple times to control the heat a bit.

We also had mashed taters, made with a tater ricer, but didn't get a good picture of them.  Also sausage gravy for the taters and steak.



Had biscuits,



And this apple cobbler, here in the making.



Leftover steak and biscuit for breakfast Sat, then on to a beef stew for Dinner (noon).  Here still cooking a bit as we thicken it.



Had bread which I have no picture of and Greg made a couple of peach crisps.



Sat nigh for supper it was chicken and dumplings with carrots, onions and taters,



And creamed asparagus,



We also ate leftover peach crisp and apple cobbler.  :whistle:

Leftovers for breakfast, (I don't do breakfast for the group, they're on they're own.

Noon we had our meatloaf.



Plus biscuits,



And fried cabbage with bacon.






And another apple cobbler, no picture. :shock:  except some of it on Kurt's plate, who if you remember from my earlier post is the guy in the purple shirt who got shot multiple times later in the afternoon, plus multiple times earlier in the day and on Sat.  ;)

Added:  There was stuff going on in Fairbury last weekend also, was a guy with a local website came out to RCS and took pictures, if you go to:

And go to Wild West Weekend picture album and open the first photo album and the 1st video you'll see the RCS stuff.  When watching the video, the first part has a story teller, watch them crazy cooks in the background workin' in the heat.

I have a bunch of pictures to work up yet, look for some posts with some recipes.

No apple pies, with temps in the 90's and humidity from 60-70% it ain't gonna work, yer at the mercy of the weather in the outdoor kitchen. ;D

OK, I could of, cause my non-PC ice box had dry ice in it, could have got the lard good and cold, would have had to borrow some real ice to cool the water, I keep no ice in my drinking water because real cold drinking water will work against you in the heat. :)  But also would have hat to get up before day light while it was cool to pull it off. ;D

My unmentionables I keep off in the woods, behind the camp and covered most times. ;D



Do they look more PC in sepi? :o

I'm not a cook and never played on on TV (or anypalce else...including my own kitche) but I do understand most things.....
 
HOWEVER

.....why you'd dip your meat hammer in egg and run it through the flour just has me stumped for sure an' certain.   ::)

Whatever. It sure looks great and I'm envious of them what partook of it all.

OK, I dipped the pounded steak in the milk and egg. ;D

O need to get pictures of the meat hammer, made it in shop class in HS, turned the handle from bar stock, cast the head out of 'lumminum scrap and milled it out.  OK, not real interesting, but the scap used to be bulkheads on a P-51, scrap was donated to LPS when the Air Guard scrapped the planes in the early 60's.  Do you realize right now someone might need that bulkhead to restore one and will have to have it made. ::)
