Bear sign?  Are you talking about for tracking while hunting or am I missing some kind of cooking or eating term?   ???

Bear sign, bear poop, bear sh$$ all old time terms for a "doghnut" twisted out like bear sign and fried, today they call them bear claws.  Any doughnut dough recipe works fine, I use the 1950's Betty Crocker one, I can dig it up later if someone wants it, it is a simple baking powder one.

Acually I just mix some flour, salt, brown sugar, baking powder some cinnamon and nutmeg just right, add some melted lard and some milk and make a workable dough.  I will have to dig that book out to get it down beyond that. ;)

OK, I'll dig it out later, I have whole wheat bread about ready to bake and I just stirred up some sinner-man rolls that are risin'.  Might include a picture later, when they are done, mine are a bitt different. ;D

Ok, per Betty, 1955.

Out of Grandma Parrish's own copy.  (I got her copy when she passed on in 1997)  Notice Grandma used this one a lot by the dough stains.

Every cook should own a copy of this vintage Betty Crocker Cookboo, the 1950 version is back in print for a while at least, snag one while you can.

For Historical correctness I use brown sugar because it was used more although white is correct.  Use 1 1/3 Tablespoons or lard instead of the shortning and you'll be right on for the period.  If using canned milk or fresh double the baking powder and cut out the salertus (baking soda)  Roll out with yer hands so they look like bear sign, (bear poop) and fry. ;D

its kinda bitter sweet eating so much you hurt yourself. I suppose I just took two years off my life but if you ask me they were years well spent.
