My birthday present arrived today. New Lenovo T540p laptop with 1920x1080 screen. Just got done installing Ubuntu Linux on it. Still have Win 7 on a partition so I can boot that if I want to.

Still an hour and a half to go, here in The West; I thought I might sneak in early and catch y'all already snoozin'.  Ha!!!  So, happy new year, y'all.

Hippo, Birdie, Two Ewes, Mr.Slim, many Hippo returns. Hey, it's still yesterday here.   ;) ;D ;D

Looking back over the past couple of week's posts, a couple of things stuck with me.

First, Stu and his family and friends remain in my thoughts and prayers.

Then, there are the eagles: That shot of the bird on the street light brought back a memory.  Back in the seventies, there was a Golden Eagle about the same size as the one in the pic that sat on a streetlight like that along my way to work most days.  In the morning, he would be facing south, the direction I was coming from, and in the evening, he would be facing north; it was almost as if he was watching the passing parade and looking for some specific thing.

Well, the evening is wearing on, and the celebrations on the TV are in full swing.  I'm gonna go see if I can find something to do, so on that note, a sentiment that I heard today that sort of hit a note with me:

May the best of the old year be the worst of the new year.

Get the ham 'n stuff started inna bit then change the furnace filters. I know that sounds like fun but it's a job for a trained professional.

Gonna watch the Tournament of Roses Parade at 10 AM and work on the new laptop.

'Tis 13 and overcast with a SW wind to warm the temp up to 0.  ::) Light flurries. "Light snow will result in slippery roads and sidewalks this morning... A band of light snow will continue to move across Wisconsin this morning. At 800 AM...the leading edge of the snow extended from Sturgeon Bay...to Green Bay...to Wautoma. The snow was spreading southeast...and should reach Lakeshore areas around Manitowoc around 900 AM. The snow will continue across central and northern Wisconsin this morning. It should begin to diminish to flurries in central and north-central Wisconsin during the late morning...with that trend shifting into eastern Wisconsin early this afternoon. Accumulations will be light...with up to an inch possible at most locations. But the snow combined with cold temperatures will result in slippery roads and sidewalks. Use extra caution if traveling this morning."

I have a pot of Cawffee ready to drink, as well as Hot water. I slept in this morning. I stayed up late, watching the Mississippi teams getting their butts handed to them. They have been paper teams all season. It started raining last night, the temps have dropped to freezing, and staying that way all day. It is a good day to stay inside by the fireplace.

weather is gloomy,  started (actually continued from yesterday) with light drizzle.... mostly cloudy and hint of sun...
but now back to overcast & 64°

I went and got a massage awhile ago feel way better  , lady does wonders to my sore shoulder's ...was wound steel tight across my neck though .

Moose is stirring up some brunch grub and I am drinking Cawffee and watching the Rose parade. The Baylor game at Jerry World starts in about an hour. Let's hope that Jerry closes the roof. We will stay away from Arlington today. It looks like that our Winter Storm Warning has been cancelled. The temps have gotten above freezing, but the rain continues.

Got to love how smart some people who think they are smart really are. 

If you want to know how much boom dust to put in the round, check with the maker of said boom dust, they all have great web-sites.  It ain't like you don't have a computer to look it up with, I mean you asked on a forum board how much. ::)

I very much agree.
Research is most important, and falls to the individual.
However, comprehension of those materials being offered, and how they are applied are equally important.
Both applications seem to be lacking in todays computer age.

Had pork,kraut and smashed taters( real ones) last night at midnight.Same is now back in the oven for a rematch. Seems like a good day for the Big Ten(?) teams so far. Both Wisconsin and MSU won.

Started out pretty chilly this morning, but has gotten up to 34 now. Have had sun most of the day.Watched the Rose Parade on Hallmark, then we went to a couple stores ::)

Ain't thinkin' I got the patience ta do the Wellington, Russ. Looks real pretty.

Good meal. Black Eyes on New Years for luck were in the soup done in the l'il red one. Went after the cornbread thing for the third time in the big black one. Third was the charm, this one was derned close ta as good as I've had. Just had ta keep messin' with the receipt (can't spell recipe) was all 'n I remember what I did for a change too.

Become acquainted with those wantin' smokeless load data from folks on boards. If ya shoot with 'em 'n they bust a gun don't loan 'em yours ta finish the shoot.

Didn't get a shot taday. Watched the near pair fish an eastern branch of the Elizabeth River. Beautiful ta see. Too far for the camera ta have caught anything but a couple dark dots. Don't think twice the lens would have helped. They ain't gonna be easy ta catch there 'less they're fishin' right in front of ya. Too many structures 'n tall pines circlin' the water. Keep at it.

Tiz rapidly approachin' beddy-bye time. Need ta hit it, early up tomorrow.

For those of y'all watchin' the football in Florida, if you see the Tomah High School Band from Wisconsin, I know two of the members.  The tallest trumpet player is one one of my friends, and one of the Baritone Saxophone players(the biggest around) is his brother, also a good friend.  ::)

I have to say, I dislike when people launch fireworks at random times of the night.  Especially when you have a cat on your lap.  A very jumpy cat.  With long, sharp claws. :-\

Know the feeling. Fighting the cold, plus back is out of whack. A simple cough is quite an adventure with that combination.

Almost 11:30, have to work tomorrow, youngest has decided to have a cry fest for a while. All in all, 2015 isn't impressing me much just yet.... :(

Roast was pretty good, tried a herb rub my SIL gave me,  :-\  .... well  , It tried it ... needed garlic
I'll stick with my own in the future, for a more harmonious outcome.
Gonna doctor it up and finish it off tomorrow...

Speaking of which, tomorrow... Coffee set to go @ 6 bells & I'm heading in for day at the plant....
it's been a nice light schedule ...fixing to get busy and back to normal come Monday.

The place is still dark and the girls are asleep in the back. I made me a cup of Cawffee in my new Kuerig, while I was fixing the big pot for a morning pot. The Hot water is ready, I bought myself an electric tea pot. It boils water in nothing flat. Today feels like Sat. I stayed up late, watching the bowl games. No breakfast yet, just toast.

Only 17 right now, but looking at almost 60 by Wednesday.  Weather is floating up and down here.  At least we got some early snow in the Sierra, and the Tahoe Basin.  Maybe we’ll get some drought relief this year.

Hope 2015 improves everyone’s lives for the next year!

It’s herbed shrimp in garlic butter tonight.   Sounds yuppie, but got leftover shrimp from New Years’.  Still not sure what's going with it, but I've got some nap time to consider it.  Just hope recalling George "Gabby" Hayes's sayings to  a friend over New Years Eve doesn't mean it's only going to  be just  "WEEEEEEEEEEEEEEEEEEEEEE BIT" of somethin'.

We have drizzle and 39 degrees outside. I fixed some oatmeal with raisins for breakfast and plenty of Cawffee. We still have vegetable beef soup in the freezer. That sounds good for lunch, no clue for supper.

Today's turnin' out nice.  Low was around 17, high is supposed to hit 40 at 4pm, but at 3pm, it's already 43. 

Tonight we shall dine on..  bratwurst I think...  haven't figured that part out just yet.

TK, Brats are always good anytime. I like mine boiled in beer, served on a kaiser roll, with plenty of brown mustard and red cabbage. We are having Fritos pie, Tamales, and salad. It is still raining.

Feeling somewhat better now, went in to work for just a couple hours, then took off for a sick day. Finally got in to my Chiropractor at 4:30, feeling better by at least 50% now, should improve by tomorrow, Cold easing up too. Won't have to worry about not over-doing things this weekend, since it's supposed to be rainy and cold next couple of days.

Got the farrier today if the weather doesn't cancel his visit. Guessers are showing a break in the rain around the time he would be here so fingers are crossed.

I get my horse bedding from a small local place that bought from a plant here in Chesapeake, plant just changed owners and they don't know if they will continue to produce the bedding or not.

Still fighting the cold.

Let's say fifty headin' ta sixty. Rain ain't here yet. Comin' from the west straight along 58. Rainin' in the radar trap, otherwise known as Emporia, next stop Franklin.

Too bad 'nout the weather. Shoot's canned. They gotta planned police support rally thing scheduled for 1230 up the street. Were expectin' 2,000 but don't know now. Still goin' with it. Gonna check it out then look o'er a potential huntin' spot nearby. All after the station wagon gets fed. Weren't payin' no attention to it 'n it's down to < ¼. Might see the light come on for the first time.

They ate pretty good. Wonder what it was. Didn't see it brung in. Ain't gonna be much left the way the male's skinnin' it. One the moderators from the their board was at the golf course yestitty. Think she's gettin' 'er camera equipment tagether.

Shrimp turned out quite well last night.  Shrimp, onions, mushrooms and garlic baked for about 20 minutes then served it on a bed of brown rice.  Added some garlic bread and some nice Chardonnay.
Probably going to finish off the Wellington from New Years Eve tonight.

Going from 37 yesterday to 47 today, with nice clear skies!  Think I’ll take down the Christmas lights before we get more snow.

Another wet, dreary day ahead. A good day to be inside by the fireplace. I had some oatmeal and toast for breakfast. I stayed up late, watching the Okie State Cowboys take care of the Washington Huskies. Victoria wants to go to the Park, but it is raining. She loves to lay in the backyard in the rain. I hated to hear about the passing of Little Jimmy Dickens and Donna Douglas.

The rain is forecast through Monday. The temp is 39, the high will be low 40s. I am having some leftover Fritos pie for lunch. Moose is fixing Beef Stroganoff for supper tonight. A good day to be inside by the fireplace.

we had snow for New Years.  Even Havasu and Bullhead got snow!  The half-pint loved it!

on a sour note... we got the letter of "hey your lease is almost up, we'd love you to stay!"

however, our rent used to be $515/month.  But now they're wanting $610!  :o yeah... NO.  
so this afternoon we're going into the banks and lending firms to see what we can qualify for.  Meg's been working at her place for over 2 years and makes over 2K per month.  I think we'll qualify for what we want out in Valley Vista, a beautiful horse-ranch/golf course area north of Kingman.  But we'll see! :D

Good luck, Willie. The leftover Fritos Pie was good for lunch. Moose got a fire in the fireplace going. The Den is warming up. I am glad that our winter storm watch missed us. The Panhandle got snow and single digit temps.

Got some of the evil frozen white stuff falling here, supposed to get 1 to 3 inches then turn to freezing rain/rain. Will be a mess on the roadways . Guess I'll try to stay home and fight the cold I came down with.Think I could have caught it from LIT through the computer??

Major, I feel your pain! The ice and snow is no fun. I'll take cold and rain anytime. Moose is fixing the Beef stroganoff for supper, with salad a green vegetable of some sort. I am ready for warm weather to get here.

Afternoon y'all.

Ever had one of those days out in the woods where the animals laughed at you?  That's been my day.  Left the house at 7:30 this morning for some dove hunting with my friend.  I brought a box of 20ga dove loads I got, ($20 for a case of 100 from Wally World), and off we went.  I figured that 7/8 ounces of 7 1/2 shot would do the trick quite nicely on some doves, squirrels, or whatever else.  Wrong!
First shot I took was at a big ole' gray squirrel.  About 25 yards, standing still with his back to me.  I shot him, tossed him in the air a couple feet, and he took off.  No blood, no fur, no tracks.  phooie.

Second shot was about three minutes later at what I think was the same rodent.  This time at about 20 yards.  same scenario. 

Third shot, I turned around, and a big ole' raven was squawking at me from a tree.  I moved in to five yards, and let him have it.  It knocked him out of the tree, to the ground.  He got back up and flew off! ???

Fourth shot was at a jack rabbit.  my glove got in the way, so I couldn't get the safety off and my finger in the trigger quick enough, so by the time I got the gun ready, he was about to go over a hill.  I just plain fired too late.

Fifth-seventh shots were on one bird.  Get this:  a Steller's Jay (kind of like a blue jay with a mullet, for you easterners).  I saw him on a branch, and figured we could use it to teach my friend's puppy to fetch birds for us.  About ten yards.  he fell out of the tree, hit the ground, and flew off.  I followed him a while, until he was about to go under a bush.  I shot him twice before he went under.  He ran out the other side and flew off across the canyon. >:(

I have reached the conclusion that Federal dove loads are magic: they ONLY work on dove.

Rain's here but it ain't been much more'n a heavy drizzle so far. Hearin' different numbers on the rally thing but the weather didn't help. One sez hundreds – it was 'hundreds,' prolly three hundred there 'bouts, in the mall's P/L when we rode thru 'n more were comin' – one t'was there sed a pile of folks didn't go to the mall's stagin' area first 'n just showed up it downtown Pembroke's fountain. Guessed well o'er a thousand.

Caught one bird here, one there 'n one somewhere else. Just sittin', shot 'em anyway. All on familiar roosts. None the new place. That'n ain't gonna werk out.

Attacked the left over ham 'n bean thing. Gotta start puttin' this stuff in the ice box before eatin' it. It's right good ta when it's fresh, better after it's been refrigerated a couple days.

Gettin' ready ta sleep thru the Raven's game. DVR'll be runnin'. See what happened when I wake up......

Thanks for the Cawffee this morning. I slept in this morning. I stayed up watching the Ravens beat the Steelers. The Cardinals did not give the Panthers much of a challenge. I don't think that they can win against a good team like Seattle or the Packers.

Pattern, what pattern?  LOL always amazes me how many people never hung up a piece of paper and patterned their shotguns to know what they would do.  Yep it blows shot out the end.  Doubt it's the shells if it happened as described, most likely ain't shooting to point of aim and what ever is catching the fringe of the pattern.

Put up some large paper and put an aiming point in the center , then pull the gun up fast and shoot at it, paper don't lie.   ;)

Back to the shotgun, I patterned it when I bought it (within hours), with the exact load I was using yesterday(Federals).  Same box of shells.  At the ranges I was shooting at, it put up anywhere between a 7" and 30" pattern.  I doubt they were underloaded shells, because they cycled that semi-auto shotgun every time.  All I can guess is that the 7 1/2 shot just didn't have the oomph to get 'er done. ???

And as to the raven and jay, we have a surplus, and they are annoying.  I mean, annoying like stealing the food off of your plate.  While you're using it.  And the ravens are just, many multiples.  And we were going to use them to train a puppy to retrieve birds, as well. 

Whatever the case, I'm taking a .22 next time, with Stingers.

I went back to sleep and woke up at 1100. Moose fixed some Cranberry-Orange muffins for breakfast and we had some pigs in a blanket. The sun is out, but it is still cold. Jerry has closed the roof, so folks can be warm and toasty inside. A roast, with onions, carrots, and potatoes is planned for supper tonight.

well, Meg's credit on her own is 619.  Mine is good too, actually a bit better, but I have a bunch of student loans.  Mine is in the lower 7s, but using my VA home loan, we'd be getting a worse deal than what Meg can get on her own.  It's really the reason why we aren't married yet.  It's for the house.  We've known each other since 2010, and we've been dating since 2012.

If it was 620, she would have been a shoe-in for what we're looking at.  It's a gov't approved loan 0% down, and she looks to be qualifying for up to $135,000.  So our lender is very optimistic.  There's quite a bit out here in that price range, we're looking at a single-story (most are) 3br 2 ba house with at least a quarter acre that allows horses.  That's the key.  There are some, it's just if horses are allowed that's the key.  Even found a couple that are 20 acres+, not sure if we need that much space though.  

We'll also try to keep the money at around $100,000, that way when the Extreme Mustang Makeover hits Queen Creek and Norco, we'll be ready ;) :D  Anything over $100K, we'd have to wait a year... which ain't so bad considering she wants a "Spanish colonial" style, and I'll finally have some work to do :D  I'll be doing the reno myself... with the half-pint and any friends that want BBQ that night of course ;)

We're in the hunt now though!  Thanks for all the well-wishes and prayers.  Hopefully for my birthday, we'll be buying a property!  My mom, sis, and uncle are coming out Wednesday through the weekend to help us out.  It'll be a good learning experience for my sis, and my Mom and Uncle are top notch property hunters lol.

I'll be re-heating some Bear Creek tortilla soup tonight.  That's some good stuff! :D We made some marinated chicken for it.  Trying to keep a Spanish influence in almost everything at the moment, just trying to stay focused with good thoughts, wishes and prayers ;)

TK: How does the shotgun fit you? How it fits can make a big difference in where the center of the pattern is when you just up and shoot. If you're taking careful aim when you pattern it, that will give a different point of impact than just throwing it up and shooting. I'm pretty sure that most squirrels out there can't withstand 7 1/2 shot, although if it patterns well enough, I might try #6 instead. As far as ravens and jays, they're not on my menu, so I don't shoot them. Haven't been that hungry.

'Tis down ta -2, clear and blustery. WC -22. Might get to -13 tonight. We are under a wind chill advisory 'til noon tomorrow. Sewed up a horse blanket that got tore last winter in anticipation of this cold snap. I'll check on the horses later to see how they are doing.

Just did this, working on swamp seed recipes, I think TLD was there for the one in the picture.   Used golden raisins per request. 

Rice Pudding/Rice Custard

What most simply call rice pudding is custard, common at pot lucks and many other places.   When raisins were added it was sometimes referred to as Spotted Dog or Spotted Pup.   
This dish is a simple camp dish; it is also a dish that will sometimes amaze people that you can cook it in a dutch oven, the reason is modern recipes would make you think you can’t or at least you’d have to put it in a dish and put water in the bottom of the dutch oven.   Well one can do that, but for me, in my camps cooking it in a separate container is a waste of fuel and dutch oven space.
 
With that said, since this will feed 6-8 people and many cook for smaller groups, I will do this recipe for either an 8 inch 2 quart oven or one can put it in a shallow dish that size and cook it in a dutch oven, if cooking it in a separate dish, most two quart dishes will need a 12 inch deep oven to make it work.   Doubling it will work for a 10 inch shallow, triple for a 12 inch shallow and quadruple it for a 14 shallow.
 

6 eggs beaten
3 cups fresh milk or 2 cans of evaporated milk (Sweetened condensed mild will be fine although sugar will need reduced or eliminated)
1 cup sugar (I use brown although it does darken the dish some) 
½ teaspoon of salt
1 ½ to 3 cups of cooked white rice (The amount of rice used will vary the final product in texture and change the serving amounts a bit)

Optional:
1/2- 1 cup raisins or currants (see raisins)
1 teaspoon of vanilla extract
Allspice, nutmeg, mace and/or cinnamon are good spices to add to taste if desired.   

Beat eggs slightly; add milk sugar, vanilla, salt and any spices desired, then beat the mix well.   Stir in rice and raisins and pour in dutch oven or place bowl in dutch oven.   

For right in the oven, put the oven on a spot that is dry and warm, but put no coals under the oven, then place enough coals to run is as a slow oven (250-300F) and bake an hour to an hour and a half, until a knife inserted in the center comes out clean.   

For using a separate bowl, put the oven with an inch or so of water on enough coals to get a slow simmer.  Place coals on top as above and bake as above.

Yes, I was there and it was delicious. I really enjoy Del's cooking at the Musters. The roast turned out great and we will have leftovers for tomorrow night. They are predicting below freezing tonight and tomorrow night. It looks like winter has finally got here. I am looking forward to the Fort Worth Stock Show in a couple of weeks and getting to see Buck again.

Evening y'all.

Day here was overcast, around 40 ish, according to my porch meter.  Went and watched part of the Rose Bowl on Youtube (don't watch football much, and don't have tv, so Youtube is where I go to watch) with a friend, then came back home and have read some books.  Tomorrow starts school again.  Though my load won't be that hard this semester.

Slim, I was shooting lead.

PE, I'll admit it doesn't fit as well as it could, though it fits better than my other shotgun.   It does affect the center of the pattern when I swing it, but all shots were taken from a good solid position (minus the rabbit).  That is what is so perplexing about the whole incident.  Though, if I've learned nothing else, I am done with shotguns.

Now, I'm going to have a soapbox moment here.  And yes, I'm sort of singling you out, Arcey.
For starters, What is a better way to teach a dog to fetch a bird, than with a real wing?  That being said, I figured the 5 cents I paid for a shotgun shell would be cheaper than going to Sportsman's Warehouse and buying one.

Second, I'll just give you a break down of the hunting schedule.
I left the house at 7:30am, and arrived at the hunting spot at 7:45.  The first two shots were taken at 8:00 and 8:23 (i checked my watch.)  I spent twenty minutes searching for that squirrel the first time, but the second, there was no sign that he was hurt, and at the place I was hunting, and where he went over the edge of the mountain, the landscape drops off nearly 300 feet in a lateral distance of 15 feet. 
I shot at the raven at about 8:27.  For the next hour I ran up and down the road (road follows the ridge) calling the raven, and trying to get a second shot, and hopefully kill it.  If I may ask, when was the last time you ran up a 5% grade with a ten pound shotgun for an hour at 5000 feet?

At 9:30 exactly, I walked farther up the road, hoping to get a shot at the raven.  About two hundred yards up the road, the rabbit popped out.  I just plain missed him.  I followed the raven until he flew away farther than I could see.

at 10:00, I got in the car and drove farther up the road.  At 10:30, I got out and hit a trail, where I walked another 4 miles round trip, this time closer to 5500-6000 feet.  I did not get any shots there.

At 11:55, I got back to the car, and started down.  At 12:15 (car is high geared, and that is a steep road.  down is faster than up), I returned to where I shot the raven.  From 12:20 when I got set up, until 12:30, I was calling for ravens.  When that didn't work, I went down  a small logging road that goes across the face of the mountain.  At 12:45, I shot the jay.  I followed him across the forest floor (these birds will sneak along the ground, rather than fly, since their primary predators around here are hawks), until 1:15 when I shot him the second and third times.  After those, he flew away.  If he was still flying, I don't think he was hurt that badly.  If he was hurt, he would have flown differently, as well.  Trust me, I know these birds.  And he flew over private property, owned by someone who doesn't speak English as well as they speak Class 3 AK.

Now to address your accusations of of being a "Vandal," and my "lack of choice of equipment."
From the previous information, it is now known that I followed a single bird for an hour  and a second for half of that.  This is through terrain that had to be helicopter logged, because the only vehicles that would fit on the road was an ATV and a small tractor.  The deck for the cut was three miles down hill.  On top of that, the vegetation is so thick that visibility is very short.  about four feet up hill.  Down hill, you look over the tops of the bushes, and can see nearly 100 miles.  When you're following a bird on the ground, that 100 miles is totally useless.
And, would one not assume that a gun that it highly recommended for shooting doves would kill a bird the same size as a dove?  Or a squirrel?  or even a raven from 15 feet?  Seriously, is a 20ga a bad choice?   Whether it is or not, I'm still using a 22 next time.
Say what you will about me, but I don't give a d@mn, now.

I'm actually baking some right now as we speak too.  Little lady went to the store last night, told her to pick up some of those krusteaz ones ;) I know it ain't legit, but it'll do for now.

umm... after reading Slim's... y'all don't want to know our weather, the snow stopped, and it's shaping up to be a mighty fine week and future weekend for ranch hunting.

funny story, the real estate lady thought we just wanted "affordable" I guess, no big deal.  When she found out our "must haves" included minimum 10,000 sq ft lot to legalize horses and we don't mind living 15 miles from town, 30 if it's worth it, she just went "oh, let me do a re-search then" ;D

the good news: they're out there.  There's a funky one, but it's on 40 acres, with additional available for sale at under $500/acre adjacent to it, not that we'd ever need that much.  Poor house, looks like someone either ran out of money, or they weren't able to finish it for other reasons.  I'm hoping the former, rather than the latter.

believe it or not, the "character" and the "you can do it" ;D are the reasons why it's Meg's favorite right now.  For me? It's steel built and requires hauled water.  Right now, without "energy efficient" systems, we use about 800 gallons per month, counting my daily pot of cawfee.  I did an estimator thingy-ma-bob, it says we'll be about 1800 gallons per month with the garden and horses.

all-in all, 33 available in the area, with over a half-acre with minimum 3 BR, 2 BA.  So yeah :D so far going good, thanks for the warm wishes and prayers!

here's one I liked, till I saw the single bathroom, but depending, that may not be too difficult to remedy ;) dig an outhouse! :D "builds character!" lol let the relatives use that one! :D

So called Dorothy over at Bob Bass Realty.  She said "no problem, and I'm so excited."  She even remembered me from a one-time meeting a year ago.  I think it's the half-pint lol.

so yep... apparently if the USDA loan doesn't turn out, because of the water issue, there's another one, an FHA loan I think?  She said if we qualified for the USDA, that one too will be cake.  She's sending me details right now

keep the well wishes and prayers.  Hopefully, this will be my last move.

Because of USCG, and school, for over 12 years I didn't stay in one place for more than a year in most cases.  Longest stop was like 18 months.  I don't count "shipping out" as "staying" regardless of the mail route lol.

last year, we resigned this lease, just to not move... for one year.  Now, here's hoping for something way more permanent.  And if we get our way... 30 some-odd acres to boot!

Willie, I am glad that you have several options. Moose is warming up the roast and veggies, It should be ready in a few minutes. The fireplace is putting out some heat and it is cozy in the den. Tonight the low will be 18, which is cold for us around here. It will be a good morning for oatmeal and raisins for breakfast, and plenty of Hot Cawffee.

The roast was even better the second time around tonight. The leftover stroganoff is planned for supper tonight. We always have leftovers, because there is only 2 of us. I am ready to go to bed, now that my tummy is full.

Some guy I'm payin' tolt the news on 100814 the reconfig would began in four ta six weeks. Think it's 010615, nothin'. Ennyways, traffic kinda heavy. Took the alternate for giggles. Got across the main road right where I woulda been had I gone straight. Let the destruction began.

Gravy

So what exactly is gravy?  Gravy is simply a thickened sauce made from the fat drippings or the broth and fat left over from cooking meat.   With just the fat from frying liquid has to be added and with the broth from roasting, boiling, or similar wet methods there is often enough liquid to make the gravy. 
 
When the gravy is made from the drippings of frying meat, it is most often made by making a roux in the pan and then milk is added as a liquid, this is often called cream gravy, milk gravy, white gravy, bulldog gravy or sawmills gravy, the last two often meaning a thicker version of it.   When making it with a broth, flour or cornstarch is used and the milk is left out, often called brown gravy because of its color.   

To make good gravy with out it wanting to lump, there has to be some fat in it, at least 1 tablespoon of fat for each cup of liquid, whether it is milk or broth.    A basic rule to remember when making gravy is that you want equal amounts of flour and fat for thickening and you use twice the fat as cornstarch for thickening, more on this as we go further.

Milk Gravy


To start out with how to make this, for those who never realized it, milk based gravy is just a form of the basic white sauce that is used in hundreds of dishes world wide, the list of sauces that are or can be made from the basic white sauce are many.   

Basic White Sauce

Thin:
1 tablespoon butter
 1 tablespoon all-purpose flour
 1 cup milk

Medium:
 2 tablespoons butter
 2 tablespoons all-purpose flour
 1 cup milk

Thick:
3 tablespoons butter
3 tablespoons all-purpose flour
 1 cup milk

In a pan over medium heat, melt the butter.  Add flour and stir until the butter and flour are well mixed.  Pour in milk, stirring continually till it thickens. Add for a thinner consistency if desired. 

With the milk gravy, the fat from the meat replaces the butter but the principals are the same, however the juices and cooked bits of the meat add flavor just like spices and herbs add to the basic white sauce to form other sauces with the gravy simply being made right in the pan.    Just use the basic white sauce recipes and use the fat for frying instead of the butter.

Milk gravy can be made from the drippings from frying chicken or other meats or in the case of sausage gravy or hamburger gravy (the SOS of military fame when served on bread or toast) the meat is crumbled and the gravy is made with the browned meat in it.   

Kettle Gravy

For this gravy either flour or cornstarch is used, it can be made thick or thin also, although it is most often made thin to medium in consistency.   The secret to this gravy is to add the thickener to a small amount of cold liquid and stir well before adding, never add it directly to the liquid.  Most homemade broth from roasting or boiling will have plenty of fat in it.   Season the broth as desired before making the gravy.

Thin:

1 tablespoon fat
1 tablespoon of flour or 1 ½ teaspoons of corn starch
1 cup broth from cooking meat
¼ cup of cold water

Medium:
2 tablespoons fat
2 tablespoon of flour or 1 tablespoon of corn starch
1 cup broth from cooking meat
¼ cup of cold water


3 tablespoons fat
3 tablespoons of flour or 1 ½ tablespoons of corn starch
1 cup broth from cooking meat
¼ cup of cold water

Pour pan juices into a saucepan or remove the meat and make it in that pan.   Combine thickener and water until smooth, then stir it quickly in the broth Bring to a boil, stir until thickened.

If one takes the heart, gizzard and liver of poultry and cook it in water to form a broth, chopping the meat as desired after cooking, this is the well known giblet gravy. 
Chopped or ground beef patties cooked in a kettle gravy is the basis for Salisbury Steak another popular dish.   

Gravy in any form is often served over the meat, over breads, potatoes, rice or grits.

I am up for a pre-midnight plumbing check, and now I am wide awake. I brewed up some hot apple cider, I hope that I can get back to sleep. It is going to be nippy in the morning, oatmeal and a cranberry muffin will do. I have the big Cawffee pot to start at 0500 for the early risers. Lunch is a big question mark. We had spiral cut ham, scallop potatoes, and Brussel sprouts for supper. That was different from our usual bill of fare.

Baked chicken breasts with cabbage 'n 'taters on the menu for the evenin'. Had sumone tolt me back in '72 I'b be doin' the cookin' I'd a laffed hysterically.

as always thanks for the cawfee.  We have a bug floating around here too.  Poor half-pint and Meg have it.  They're both troopers though, half-pint still working her numbers, and Meg still working.  Thank God with her weird schedule she's basically off 3 1/2 days.  Hopefully she can recover quick like always.

I haven't gotten it... yet.  So fighting it off with tea and cawfee for now.  Make it through this weekend without too much drama, and we'll go from there.

Del, it's sounding mighty fine for that book of yers.  Best description I've heard on what genu-ine gravy is ;) it's an om-nom sauce made from all the excess fat and trimmins ;)

as far as my Vaquero persona - I'm now in talks with TsalagiDave via PM and such.  Everything is going really good there.  Just really not too high on the priorities right now, with the ranch hunt and all.

and on that, love saying me and Meg are on the same page.  We'd rather wait even another whole year, to get what we want, rather than compromise on something else.  We're seeing properties on Saturday though.  My Pops and Mom are coming up, their insight will be invaluable... maybe.  Dad's been working fire and flood restoration for over 30 years.  He knows property.  I just wish I could get his unbiased opinion on the one we really like, and know it's unbiased, instead of being biased by Mom.

Maintenance dummies are doing some work, got the area plasticed off, cutting block, went to break, found out when I came back they didn't do a good job, shop was fulla 2 psyco-gas fumes from the saw, got it cleared out, cold in here, also the managed to kick a breaker and lost the list on word I was working on, should a saved it before I left, but no reason to suspect they'd blow a breaker. ::)  Oh well, an hours work shot to heck.

Wind's picked up 'n the temps droppin'. Kinda chilly in the lighter breeze of the mornin' whilst I was outside. Didn't find the birds I was after, shoulda stayed longer, but did find HK it the GC. O'ercast when I spotted 'im. Sun come out. The boy graced me with a fly over:

He disappeared in the direction of the nest. Sun went away. Rode by the nest, didn't see 'im 'n was glad of it. Had some decent shots already. Warm 'n no breeze in the station wagon. Left, picked up the gift I ordered for the fat lady 'n went home.

Baked yard bird come out pretty good. Gotta first try on chicken orzo soup on for tomorrow. Lookin' forward to it. Gonna get a good night's sleep so I'll be prepared. Labor intensive. Gotta grate a couple carrots 'n open a can.

Neighbor's had their water supply line freeze up yesterday. Had to have somebody come out last night to get'em thawed. Heat tape had failed, probably the original( circa 1990-91). Guy got to it around 10 last night, finished about 11:30.

With these temps, we've been doing short days as it's too dang cold to stay out for very long. Had to shovel around the barn/club house this morning, took us three breaks to warm up before we got finished with that. Salt won't do any good at these temps either. Guesser's are sayin' snow tonight,maybe 3 or so inches worth, won't get a warm up until maybe Sat. or Sun. ::)

Me neither! I ran out of Cawffee, so I made another pot. I received an e-mail during the night that a parcel had been delivered. It contained some jellies and other glass jars containing liquids. I got up and checked the front porch and found it. I had my nightshirt on, so I went outside and picked up the box and took it to the kitchen. I was afraid that the glass jars would freeze and break. Nothing seems to be leaking out. The wind was blowing and the air had a real bite to it.

Up to 24°. Breeze has eased off some. Full sun.

Thought the ingredients looked a l'il thin for this thing I'm doin'. Got all but the pasta in the pot 'n it wasn't 'nuff in there ta feed me alone.  Went to the off site for more stuff 'n doubled the parts list.

Couple middle aged folks walkin' thru the 'hood stickin' flyers on doors offerin' ta do yard werk. Seen their old beat up truck 'round neighbors' houses. Admire 'n respect they're out in the weather tryin' ta make a dollar. Gonna call 'em 'n see what kinda deal they'll make for an on-call sorta thing this spring. Ain't real fond of the folks I got now.

Makin' a big bowl of Beef Vegetable soup disappear. Just might fill it again.

Friday is our pizza night, usually. It looks like we will be having our first winter storm this weekend. The entree will change to Stew, Vegetable Beef soup, Jambalaya, or Chili. Another good night to sit by the fire.

As usual gonna be lookin' at an early start tomorrow. Federal jury duty comin'. Went thru clothes today. Got one dress shirt that fits. Good on on slacks. Belt has one notch left over. Got a new pair of elastic suspenders still in the package. Brushed the dust off a pair of dress shoes, feel okay. Got the tie right the first time. Herringbone jacket'll be good, ain't gotta button it. If I did it could be a problem. Bought the overcoat a bit big 'n it fits fine. Go to Sam's tomorrow for dope. Pick up a couple shirts while I'm there. Might hafta go to a funeral or somethin' sometime.

Couple hunks of cheese then it's rack time.

Did a Federal call up once long time ago , wasn't seated though....
 Civil on the other hand , seemed like they had me on a Rolodex , they'd summon me for duty in Nov-Dec.
every year for about 6 years running....
They have skipped over me now a coupla years.

Dress wise, they get what I got "shirt sleeves"  , aside from my 19th century Frock , no dress coat  ::) and no suit either
 , unless I count the Black  Leather blazer ...

That'd leave me with a problem-all I have is jeans. I even got married in jeans! My best pair, at the time. Guess I have some 19th century type stuff, but it's still the 19th century version of work clothes.

That's my issue too... I have Jeans & Chino's , casual button down shirts & my 19th Century stuff which is my Sunday go to meeting NCOWS convention stuff.

Truth be known, I'm NOT fond of the jury selection process, The county (historically) has it as about distasteful as the little security natzi could make it.... what with 0 parking available, had to be at a parking location @ 7 AM to be bused  to the court house by 7:30 for an 8: AM court time  ...
Basically striped searched , remove shoes, belt , all items in pockets, and wanded....

If you were released, you were on you own to get back to your parked car , some 7 miles away ! Or a 15 min. video was presented , on why you should be GLAD to serve  ::)  all the time you lose a day's pay or more and
get $15 a day , paid in about 6 weeks hence.
If you do have to stay beyond lunch , you can't leave, and they have a cold packaged sandwich machine, with those wedge packaged white bread crap, who knows how old ? !

No I'm not a fan...nor a happy camper... perhaps more inclined to hang someone....

Add that to the idea I have to go buy a dress jacket or suit just for them ! ....  ::)  negative !

All I have is my 19th century clothes, could wear the frock, Terry did that a few years ago and got picked.   ;D

Course a few years ago I sold such an outfit to a county PA out west along I-80, said he needed a flash and awe outfit for when the caught a drug runner and he brought in a city slicker lawyer, said it messed up those fancy pants to have to look at him.   ;)

On the 'broad' note, consider the fella was out here yestitty puttin' flyers on doors for yard werk. The ole boy needs a new piece of equipment. Just long's as it had all the buttons 'n didn't look like I slept in it. The stuff was 'work clothes.'

The buildin's the one ya see on the news when they're perp-walkin' a pirate ta the transport vehicle for a ride to their new home. Same one I was in when I was sued for $3 million.

Werse part's the travel. The gun shop is 746 Granby, the court 600 Granby. When I quit my office was at Brooke 'n Granby or what might as well be 200 Granby. I leave for the shop when I go 'bout 0930. Gotta be in court at 0900. The traffic at that hour is fully 50% of why I quit. Werse now than it was then.

Got a couple serviceable shirts it Sam's < $25.00. Didn't see a bird. Last of the Vegetable Beef Soup's went away for lunch. Ain't sure it was 'nuff. Thinkin' on some Chicken Orzo for desert. Decide when the bottle of O'Doul's is empty.

I got the call about an hour ago I've been dreading, Steve Summers aka Stu Kettle passed away this morning.   It looks like the funeral will be Wed afternoon, Pitspiter and I are planning on going to represent The Grand Army of the Frontier.

Kinda cleaned more stuff out. Found meatballs she forgot she'd froze. They'll be used tomorrow. Pantry was hidin' some rigatoni 'n bow tie dry pasta. Weren't much in either but a fair amount tagether. Boilt that up 'n nuked a can of mini ravioli Ali forgot ta take when they went home. Weren't exactly restaurant quality but t'was tasty.

Shame either team had to lose the game. Well played by both. Got the DVR set up for the next one cuz I'm prolly gonna be zonked 'fore the first half's done.

but :(  the Clone called, it seems her battery was dead, stranding her a few miles from her place...
she tried to call "The one that must be obeyed" cell, "SHE" did not hear it...
So the Clone hoofed it ...  ::) made it OK, then called later this morning for help.
We got it jumped, and by then it was raining ....just got back.

So the trip to the range is postponed  :(  DRAT !

did get a BBQ beef po'boy at WaWa's , didn't think much of it  ::) , didn't eat all of it ...they got way better.

Headed to the concrete pantry , think'n' Shrimp Alfredo tonight.

I stage the Mecum Auto Auction this week , it's televised , but not sure when... always enjoy the cool cars, bikes & boats

I know it's too far, but I got the word this morning that Stu's funeral will be Wednesday, January 14th at 1:30 PM MT (Mountain Time) in Grant, Ne at the Methodist Church the address is 500 Warren Avenue.

I will let the family know the kind words everyone has had, the prayers and how he will be missed.    :'(

GAF members who read the barracks know we have some plans in the works for the muster in honor of Stu and a couple more GAF members we have lost since the last muster.

The North Platte Telegraph's running the death notice. Reporting the arrangements are being handled by Bullock-Long Funeral Home. Their site features online condolences but his name doesn't show as of yet.

Thanks for the Cawffee this morning. It feels like a 2 Pot morning. I slept in this morning. The Jambalaya turned out good, I added some shrimp about 10 minutes before it was done. It started out with shredded chicken and smoked sausage. The crock pot did a good job. I had a loaf of French bread and a salad to go with it.

evening everyone,

apparently something good has happened:  Meg is getting us some In-n-Out burgers for dinner.  She and I reserve their special burgers for unique celebratory occasions.  Started back when I got my El Camino and first stop in her was In-n-Out.  Now, not saying it's the only time we eat there... but lately there's usually a reason.

still on the "hunt."  But it's looking good.  My 6th sense still works, the first place Meg went to for lending has a shady reputation, so we're going someplace else on top of what BofA says.  We have an appointment tomorrow.  Hopefully by Friday we'll be putting in an offer.  We're cutting it close, but hopefully we'll only have to stay here for another month or so.  Hopefully.

that grubbing looks good Arcey.  We had chili ourselves last night.  Don't know what came over me, but I ended up eating five of Meg's little corn-bread muffins with it ;D  yeah... I got in trouble lol

I most likely will not stop by in the morning, leaving early to meet Pitspiter in Lexington, leaving mine at Dalton Materson's house.  and riding with him to Grant for the funeral.  Most likely be dark or close to it when we get back to Lexington so Dalton has said he will put me up till morning since i don't do as well at night on Interstate or busy highways.  Would be fine if I took gravel roads but that makes a long haul and since I don't know the roads that well out that far I will pass. ;)

Neither the plaintiff's nor the defense lawyers wanted me to watch their presentations. Got struck. I'm crestfallen.......

Traffic don't seem no different than it was in this weather January 2002 when I had ta drive in it. City parkin' ramp has automated money takers - wouldn't take my Visa 99% of the retailers 'round here'd kill ta get their hands on. Thought it best ta carry cash case I needed it - did.

So far, my call to Jury Duty has never gotten me past the three or four dozen people they originally call for Jury selection.
I am a retired gunsmith... I think that said enough!
I also wear what I wear every day when out and about on normal runs. (that is not flip-flops, shorts and a t-shirt)
BTW, I am scheduled to be called again this year. We will have to wait and see.

looks like it finally caught up to me.  I'm running a slight fever (more annoyance than anything), but have some head congestion and a pretty ugly cough.

last time I got called into jury duty I was "away" so they let it slide.  What's odd, that was easily 8 years ago, and no new summons since.  I've been living in the same county now for 7 years.  My goose should be up soon lol

Sounds kinda like a colonoscopy, Maj.

Only three outta thirty one was wearin' what the department defined as 'court attire.' Left the jacket in the station wagon just wore the o'ercoat in. Figgered if someone objected I'd go get it. Walked inta the court room in shirtsleeves 'n a tie. No one batted an eye. Won't be wearin' one when I go back. Was gonna pony tail the long, flowin' locks. Decided ta go au naturel. No one said anything 'bout that either, includin' the guy doin' the wandin' at the entrance. Worked with him for years when we were both cops. He was the XO in the bureau when I was the admin sergeant. Got him a retirement job. He laughed hysterically.

Went inta the assembly room 'n took a seat as far away from everyone as possible. That drew a long look from the dude behind the desk. Woman a couple rows from the front tryin' ta cough up a lung 'n I weren't sittin' near the next one, maybe Willie, what may be inclined ta do the same thing.

Three outta ten down.

I got called to Jury Duty for the Federal District couthourse in Alexandria, VA a few years ago.  Was for a case in Washington DC.  It seems the plaintiff was smoking Pot at a KISS concert & got thrown out by Security.  He had to wait outside for his buddies who were still inside and enjoying the concert.  He was suing the arena & the security.  We voted the arena & security were not at fault.

Big waste time at a Federal courthouse.


Got called for the county once but was not selected.

Been here in Reno for 14 years now.  Got summoned the Washoe County Court once about the second year.  Haven’t heard from them since.  Maybe they didn’t like the boots, vest, pocket watch and cowboy hat!  But that’s not all that abnormal here in Nevada.

Just made it in a got a cup brewing.  Got there and back, not with out some problems that were a cluster mess.  Made it on time and that's all that counts.  I'll report later, but it's not the weather for the heater to quit.   Even got to ride shotgun in a State Trooper's Charger, never got to ride shotgun in a police car before.   Can't remember his name but a co-worker of Niedlander of course, went to academy with him.  Never would have made it with out him, my thanks to him, my hat off to him, but since he had a Charger that goes with out saying, even got to do an Interstare Uy with him.   ;D

For those who haven't read the posts in the Barracks, Pitspiter is putting together a squad to do the proper post-Civil War service as prescribed in Upton's manual with Larry Little aka Gripmaker as head chaplain of the GAF doing the service.  Looks like Stu's family will attend.

OK, here is what happened yesterday, was about 125 miles out and about 70 from where I was to meet Pitspiter and The Field Marshall gave me a hiccup and I looked at the gauges, temp was climbing very fast and almost to the peg, shut-er down and pulled off about 2 miles from the next interchange and I got out and everything was coming out the over-flow.    

Called Jerry and he was at not point to rescue me with out missing so I told him to go on.   A State Trooper came by and took me back to the last interchange and got a couple jugs of Auntie-freeze.  Told him I thought I could at least get it off I-80 since it wasn't leaking but boiled.   Got it and shut it down, let it cool and filled er up again and headed toward Shelton 4 miles north on The Lincoln Highway (US 30)  figured that was better than the side of the road since it's a bare interchange.  

Got to Shelton and it was running decent for temp so I headed it west and called Jerry.  He was past the meeting point and I told him to keep going and I'd see what happened.   Went about 70 miles on 30 and things seemed OK so I gassed it up, bought a 3rd jug as a spare and hit I-80, kicked it a bit and started running 75 to 80.  Got on down a ways and called Jerry to find where to turn south to Grant and he'd stopped for lunch and I was about 10 miles behind and we were about 75 from Grant.  He stopped at the rest stop about 3 miles ahead (next one was past the turn off) he changed to his uniform rather than wait and I pulled in, jumped in his pick-up with my haversack and we got there with 15 minutes to spare.

Got back to mine about 5, I hit 30 again cause I hate I-80, got to Dalton's about 8, his wife and him took me to supper and Dalton and I talked a bit and then I headed in this morning, heater is not working, was about 15 when I started.  Had a bit of a chill when i got home, over it now.

Seems to be a thermostat sorta working, temp goes from half to 3/4, but before the disaster I had part of a Wrangler box covering part.   Removed it and I think it was enough, will worry about it next week will do fine to work and back till then.

I am glad that you and Jerry got to attend the services. I know that the family appreciated it. I am sorry that the General messed up with you on the trip. I am glad that the trooper was there to assist you and you had a place to spend the night. Good friends are hard to come by. I wished that I could have been there.

BTW one thing I do hate in that area is cell service is good now, radio, not so much.  Gave up and went to KRVN 880, no music, all farm related talk, was better noise than the other stations.   Got a jingle stuck in my head, just add a bad imitation of Eric Clapton in voice and gee-tar.

Creepin' up. Just shorta forty 'n goin' ta just shorta fifty with sun. Sticked the oil yestitty, 14”. Might get away with one more fillin' if this weather holds 'nother six weeks.

Propane is kinda bad. 'N ta think someone got paid for that. Hope no body here picks up on it. The lion king thing they run a couple years ago still holds the dis-STINK-tion as the worse. With no warnin' at all, some woman starts screamin' somethin' in swahili 'n ya couldn't kill the stereo quick 'nuff ta avoid hearin' it.

Clean up from yestitty's minimal. Gonna be werkin' on the menu whilst I'm huntin'.

Thanks for the coffee....  today is "HER" & my anniversary.... 27 years , yeah,  I married late , I was 39 ...

Course the first 38 years was , not misspent ,  :-\  had fun, ran hard and put up wet !

Took the day off  ::) I thought  :o  , first a vendor is failing to deliver on his promise of delivery on a $8800.00 materials order.
Ass hat.... promise to meet my delivery deadline so I can service the Calif show....
now he is saying, he'll be 5 or 6 days or more later... ::)  I'm putting pressure on them, resolve by 12 Noon today or I'm going to place the order elsewhere ! ...

I have options , and I may have pay more to another manufacture ( Laminates ) but they do have the color and can meet my deadline...
though it will be about $2000 costlier...

Next my Payroll ( Direct Deposit ) had computer glitches, and my crew payroll was not deposit with Federal Reserve , so no one has
paid at 12 midnight Direct deposit , including me !  so I had countless calls say's they weren't paid  ::) this company wide !

I sent an email so all now know, all should be deposited by 12 Noon today ! ( I HOPE ) or my phone will ring off the hook !

Ah ...lovely day OFF !  ::)

Thanks for the Cawffee this morning. The girls are still asleep in the back. Moose is not a morning person, so she takes advantage of sleeping in on the weekends. I have always been a morning person. My Dad always got me up early to get to school or to feed the animals on the weekend. He took care of them during the week. Our first two shops were near the pasture, so he would stop by on his way to work. The weather should be nice this weekend. This is also the first weekend of the Stock Show in Fort Worth. I am going to try and go over there next weekend.

M2, That happens sometimes. Moose forgot about the mashed potatoes she fixed at Thanksgiving. I had some pancakes and milk for breakfast. Moose is gone to get her hair cut. Victoria and I are doing okay this morning. No plans for lunch right now.

Don't think I mentioned this before. The Sys Admin at verk got another job at Green Bay. His last day was 1/2/2015. Therefore, I am now the Sys Admin and the only infrastructure employee. I haven't broke anything major yet, as far as I know. We are looking to hire to additional people. Have one good candidate so far. Sunday is the monthly systems outage/server maintenance day. The former Sys Admin used to do the outage, but since I am the only employee with the knowledge it falls on me. Therefore, I will go to early church tomorrow and then go to work. I should get there about 10:30. I have until 18:00 to get everything done before users expect to get back on the systems. So, I might miss the Packer game. I'll have to see if I can get a feed to it somehow.

Had a nice Chimichanga for dinner last night.  The Mexican Restaurant at one of the local casinos has great prices!  My Chimi, the wife’s Burrito and margaritas came to a tad over 20 bucks.  The servings were large enough to have leftovers into next week.

Supposed to get to 60 this afternoon.  I’m back on cooking duty.  Grilled marinated chicken breasts, wild rice and broccoli are on the menu.

Hid 'n forgotten stuff went for din-din. Found a half box of half length spaghetti in the on-site pantry. She sez she don't remember buyin' or usin' it but the opened box was taped shut 'n I don't do that. Don't think I've ever bought it like that either. Gone now.

Two partial boxes of orzo, an unopened box of rigatoni, some bow tie stuff (forget what it's called) 'n a half box of ditalini I used last week. May change my game plan for tomorrow to beef stroganoff.

Ennyways, y'all sleep well. Prolly be up 0400 - 0445 myownself. Just the time it happens.

Left over steak fajitas on a salad took on the roll for dinner, t'was tolerable...

Me, ? ...I had to check the plumbing, and found I was Cat rack , Kato ,Molly & Jigster decided I was good warm sleeping company.
Felt like that guy in the commercial with a cat T shirt...

Guess the half stuff's a sales gimmick. Some folks like freaks or oddities. Consider Danica Patrick's popularity. Some folks like sale items to the point they'll buy sumthin' at save sumthin'. Think that's the answer. Coupons 'n sales are like a game ta her 'n I gotta admit she does it well. Either way it tasted just fine.

Interestin' ta see old stuff. As folks have done with cars 'n guns someone always finds a way to make things better. Cameras without film what don't require a dark room ta process and edit. Witness chili 'n the addition of beans. What'll they think of next?

Had the HVAC thermostat go south yesterday.  Thought it was just batteries, but replacing them didn't help, so today was a trip to the Big Box store for a replacement.  Luckily  the overnight temps were just below 50 and we’re looking at 60 for a high today.

Had the marinade chicken last night (turned out great).  Tonight is pizza night so I’m off the hook for cooking.

Nice variety of weather we got. Rained kinda heavy once. Smatterin' 'n tryin' ta clear off. Sky was fantastic early with the clouds 'n all.

Hadda put batteries in last weekend. Thermostat werked the whole time. Low icon flashed a week.

Found the Gcpair together this mornin'. Both flew. Almost had him where I wanted him but no cigar – or image of him 'n the GC's American Flag in the same shot. I'll get it. Patience.

She was right funny this mornin'. Great Blue Heron got 'im a big carp. Took 'im a while ta get it just right but he managed ta swallow the thing. She was delighted with the show.

Blue Cross went up $60+ a month for this year, so during open season, I switched to the Rural Carrier insurance, only went up $3.







Blue cross finished on 1/9/15.









still waiting to hear from Rural carrier benefit plan.









Govt still sending money from my paycheck to Blue Cross.














And I'm tired of my hip hurting, but ALL these insurance companies are off for the holiday.......

Definitely not looking forward to medicare....

Not sure how it's gonna work for me, since I'm an "old dad", when I get to medicare age, I'll have a 10 and 14 year old, and a wife with 15 more years before she can get it, so I'll still have to buy insurance for them.

The high today was supposed to be 53 but it’s already above 54 and we’re not at noon yet.

Steaks on the grill tonight as we will be celebrating “She Who Still Works” not having to work today.  She gets two Sundays, so tomorrow will be my second Monday (that means I get to delay doing the laundry until tomorrow).

I'm gonna get started on them tomorrow, was off work anyway to get the mail car aligned, and now seems I need to get me "aligned" too. So it's telephone time first thing in the morning. Probably won't be fit company by 9AM...... I figure if SOMEONE"S getting the withholding from my paycheck for healthcare ins, then SOMEONE needs to pay for me some healthcare. Don't really care if it's the old company, or the new one.

Kinda got conflicted it the Kroger place Sunday. Had four quart programmable pots on sale for $19.99. Was lookin' on the boxes for a black one then got ta wonderin' where I'd put it. Left it there. Could put the pork in it 'n come in from huntin' anytime. Oh well.

Thanks , fella's ..." SHE"s pretty excited her own-self.

One kinda neat thing is her commute, We live out in the sticks south of town , everything is to the North & West ... business wise.

She will drive about 15 miles South down to 3 Lakes Management area , where the State has the Biology lab... no traffic ,
Just a straight rural run down US 441 to her office 20.

I see a big Coffee in my future commute this morning, on sale $1.00 any size , doesn't take a  degree to guess I'll get the big 'n' thank you very much...that,  and gas is well under $2.00 , I'll tank up in both accounts  :)

Sam's had the three small pots in one heatin' element thing for forty last time I was there. Wanted it but it didn't follow me home. Where the roaster come from, it did follow me home 'n now it's sittin' up here in 'Hey! Loft' with me. Big ten quart cook top pot found it Goodwill for four bucks is in the vehicles' room with the tiny red one. Round black one lives in the laundry room. L'il red one stays out in the breakfast nook. Big black one's in the dinin' room. Really tiny red one's under the sink – I think. Dunno where she hid her blue round one.

Think Andi borrowed the blender. Ain't gotta food processor. Guess that's a good thing.

Thought I'd best top off the station wagon on the chance I'll have ta go to court tomorrow. On the way, someone's chihuahua is playin' in the middle of S. Plaza Trail. Shoulda done the merciful thing 'n squished it but I didn't. Gas was at a $1.879.

Weren't many people out. Fat lady picked up somethin' at the dollar store t'other day I wanted a couple more of. Ended up spendin' $17.00 'n they didn't have the grits I'm outta.

Need foldin' money so I won't get stuck in the city parkin' lot what won't take my plastic. Branch it the mall's nearest 'n I gotta hit the house ta put somethin' in the ice box before I go to the off site. So I'm goin' there.

Gonna get in the parkin' lot the back way. Green arrow comes on ta turn in. Air head first in line's gonna make a u-turn. Ain't gonna make it, nails the brakes 'n puts it in reverse. Air head behind her's gonna do the same thing but now she's layin' on the horn. Meanwhile, I'm stuck behind both 'em. Chicky babe gets back where she can clear 'n she goes.

By now the green for traffic both ways comes on. Air head #2 can't make it either 'n she backs inta traffic – more horns. By some grace unknown to me I make it across on that light cycle.

Get in the parkin' lot. Get stuck by some old witch stoppin' in the lane yer supposed ta go in lookin' for a parkin' spot. Get around her, go thru the ATM. Now I got my cash.

Sittin' it the lot waitin' for the light ta change so I can get out on the road leadin' ta the house but no. Ambulance comin'. While I'm waitin' for green a second time, another ambulance comes by from the direction the other'n was goin'.

Make it back, put stuff away 'n head to the off site 'cross the road from the huntin' grounds. Just a quick ride by there. Run inta one the serious photographers, had ta stop for a minute. No birds. Rats.

Get to the off site. Got out the station wagon 'n suffered a violent, sudden sneeze. Open the station wagon back up – remembered I need paper towels. Had 'nuff to take care of the aftermath of the sneeze.

Pick up my stuff go to the register, put it down 'n stand there. I'm behind a young woman, almost as tall as me. Not unattractive but painfully thin. With 'er is an older one just like 'er but with bleached blond hair age ain't been too kind too. Takin' that ta be the grand momma. Their groceries are goin' in a coaster wagon. L'il girl with 'em I guess between two 'n three 'n she's loose. Walks up ta me, throws 'er arms out 'n yells, 'Daddy!'

Back home. Think it best for me ta sit right here 'til it's time for the evenin' repast.

That's what I had, TLD. Had the leftover scrap end of the Christmas ham on the freezer, made up a pot of half pinto/half great northern beans, half an onion, clove of garlic, and that ham, cooked all afternoon. While I was off to the chiropractor to get "aligned", she made a pan of cornbread(no jalapenos, though). Early supper just after I got back. She said she was trying to take a nap, but the beans on the stove wouldn't let her sleep...... Kind of like what happens when the crock pot has a roast in it.

Did fried fowl bosum, she bought some the other day and looked at me with those puppy eyes and wanted me to make it.  OK, I agreed to do it once a year, reminded her I done it twice last year, but that didn't count I guess. ::)  Wasn't bad as fowl things go, pounded them a smidgin, soaked in beaten egg for an hour or so and dredged them in flour, even fresh ground the pepper.  Fried em in pig stuff and had corn that had been soaked in drain cleaner, the only way I like canned corn, wen't bad at all to tell the truth.   ;D

"SHE" is enjoying the Job... pulled in yesterday morning and 3 deer were in the parking area, regulars say they are up almost every morning.
As SHE was leaving spotted a Eagle , and was excited to see a pair of otters playing in the Creek along side the road in.

Down side is the State compensates every two weeks , but that's no big deal really and they do direct deposit.
SHE already knows she's gonna like the position, today she's alone as all are in the field, and Biologist is traveling to Ocala.

We got about 3 inches of the stuff. Was out in the plow truck until almost noon. It didn't quit until almost 10:30. Plowed park twice, no salt on road,tended to melt after being plowed. Only salt tossed was around the barn area and the mail boxes. Speaking of salt, we've had bags stolen twice now from our staging/loading area. 4 or 5 disappeared last night,plus one was dropped by the skid and broke open. That was the clue that we were hit again ::) >:(

Tripped o'er a bird goin' to an off site this mornin'. Waited around for flight. Didn't. Went on. Come back 'n the bird's still there. Got set up. Ain't there no time when the bird, uhhh, lightened the load. Raptors do that before they fly. Caught it right pretty.

Fat lady's headed to the gym. I'm cleanin' revolvers. Sent a text. She's got the birds workin' on the nest on Princess Anne. Hauled tail. Got a few but the light was runnin' out. Keepers tho.

Speakin' of revolvers. Court don't want me. Two more calls to make. The next one after the shoot.

She did cube steak, mashed taters 'n I did collards. Prolly be sumthin' quick tomorrow cuz neither of us'll feel like messin' with it. Rack time shortly.

We've got some small raptors hanging around the park and adjacent areas.Ranging from the big Red Tails to some smaller ones. Have noticed one of the smaller ones twice in the last week or so. Once in one of the trees around the barn/club house, and once on a wire going up the hill towards 77. Haven't seen much of the pigeons that usually hang around in the upper section of the barn( storage area). Believe that one has been dining on squab ::)

A great Place to photograph Bald Eagles

Three Rivers Wildlife Management Area is located about 25 miles south of St. Cloud, Florida on Canoe Creek Road. The birds that may be seen on the main road include Bald Eagles, Crested Caracara, Red Cockaded Woodpeckers, Sandhill Cranes, plus the usual south Florida water birds.

A good place to start your bird photography is a visit to Brinson Park on Lake Tohopekaliga. [Known locally as lake Toho.] Brinson Park is located on Neptune Road [County Road 525] in Kissimmee, Florida. On a recent trip, we spotted a Bald Eagle in flight over the lake as soon as we got out of the car. We also photographed Woodstorks, Snowy and Great Egrets, Anhinga, Double Crested Cormorants, Moorhens, Great Blue and Little Blue Herons, and more.

If you continue East on Neptune Road you will come to Canoe Creek Road [County Road 523]. Turn south
. In a short time you will leave the city behind. At this point, watch for Eagles, Caracara and whooping cranes. Caracaras and Bald eagles are very likely to be seen either perched in trees or in flight.

Just before arriving at the Three Lakes Wildlife Management Area, you will come to Joe Overstreet Road. This road cuts off to the right [west]. This road leads to a boat ramp on Lake Kissimmee. You may as we did see Whooping Cranes feeding in pastures. We also saw Bald Eagles. The area here is private, so take your photographs from the road right of way. At the end of the road is a boat ramp, tackle shop and air boat tours.

After returning to Canoe Creek Road continue south
to the Three Lakes WMA. There is an entrance fee of $3 per person [max $6 per vehicle]. The area on both sides of the road contain Red Cockaded Woodpeckers. Nest trees are marked with white paint.

Road 16 in the WMA is a good road for birding. Not long after leaving the main road take the side road to the boat ramp. This will take you to Lake Jackson. On our recent visit, three Bald Eagles circled the boat ramp for 15 or more minutes. If you get to the ramp before the fisherman arrive, you may find Limpkins.

Return to road 16 and take it to the end. Along the way you will pass over some canals where wading birds are common. At the end of the road is the Jackson-Kissimmee Canal. We saw Bald Eagles here along with the common water birds. Road 10 goes through an area noted for Florida Grasshopper Sparrows.

Return to Canoe Creek Road. Here you can go left and travel back to St. Cloud or turn right and continue to US 441. If you go south
on 441, you can access at Kissimmee Prarie. [From 441 take County Road 68 to US 98.] Bald Eagles and Caracara are commonly seen on 441 in this area. You may also see Snail Kites and Turkeys.

Took a PTO.... have fencing contractor doing the pool area & back yard proper .... in black 5' estate spiked picket fencing

I have fencing around the perimeter of the acreage, but it's not really a child barrier, I mean it is legal in the " sense of the law ".
But should there had been accident, a shyster could force a liability case,  pounding out letter law !

Not worth the worry... with "SHE" working and not at home part of the time.... :-\

May see a small return on the Home policy , which more than likely will be eclipsed with any new rate hikes in the future  ::)

Prairie City Slim celebrated his 70th birthday, we had cupcakes in his honor – no candles. Had one freakin' clear 'n clean miss onna lollipop knockdown. Didn't stay standin' after a hit, just flat missed the derned thing.

Ennyways, baked chicken breasts w/ wild rice 'n collards. Been a long time since O-Dark-Four hundred 'n no thirty. Rackin'.

I picked up my Smith Model 1 lemon squeezer in 32 S&W this morning. I am having a hard time finding any ammo for it. It is fairly nice looking, with about 99 percent of the nickel still on it. I am really anxious to shoot it.  I won a Colt 22, "Little Pony" on an auction, I should be getting it soon.

Somewhere in my loading room build I misplaced my 45 Colt dies , I know as soon as I buy a brand new set , I find my other brand new just purchased set.. ::)

Made a stew beef, onion & green pepper on bow-tie noodles, drenched the stew beef in floor for browning and stirred up rue...
some garlic & herb evoo on stove top.  
It was good, but the beef was tough , when I do it again I'll either use the big red one , or tenderer cut  :-\

52 outside, supposed to go to 54, but I think we’ll pass that.  Clear deep blue sky that would make a great backdrop for Arcey’s  eagles.  Our eagles seem to stay located down between Carson City and Genoa.  About 50 miles south of us, so I don’t get to see them too often.

Did grilled marinade salmon last night (one of She Who Still Works) favorites.  Turned out great!

Did a homemade Egg McMuffins  with cheese and ham for breakfast for both of us this morning.

Tonight is deep fry night.  My version of Hooters Hot Wings, deep fried onion rings and French fries.

Cleared up nicely, breezy @ 15 MPH  claims say headed down to 40° , out here in the stick I think a bit lower.

Warned up the stew beef dish for lunch.... I think its burgers tonight.

Guessers missed the hell outta it. Forty sumthin' now 'n that's warmer'n been all day. Thought I'd freeze in the breeze shootin' the neighborhood eagles. They put onna show too. Caught 'em gettin' a blow dry after a soakin' rain on their cell tower. Left when they did 'n met 'em at the nest. Watched some construction materials brought it. Saw a curious juvenile flyin' 'round. One kept watchin' 'n finally took off after 'im but no dog fight. She/he decided ta leave 'em be 'n say TTFN.

Whilst that was happenin' so was the soup. Mighty fine when ya gotta chill in ya. That 'n whatever the thing is they're runnin' in Daytona ought ta put me out for the night in short order.

I fixed some oatmeal and toast for a late breakfast. Moose took Victoria to the park for some exercise. She always goes to sleep when she gets home. It is supposed to get up to the middle 60s today, it still feels cool outside.

I had a CVA/Spanish made variation that was vary similar to this rifle back in the late 1960's.
It was very accurate, not in authenticity, but in how well it shot.
At least until the sear and tumbler went bad. No parts were available to get it back up and running again.

Woke up to steady Cold drizzle... low 50's,  Cleared out to pretty blue sky the wind came up steady a 15-20 mph
Wind chill kept it feeling in the upper 50's We'll see 40 in the Morning and winds increase to 25 MPH.

That is why that I moved to the Metroplex from the Texas Panhandle. They had over a foot of snow up there last week. The elevation is around 4,000 feet. It can snow up there from Labor Day through Memorial Day.

Weren't THAT bad huntin' weren't possible probable..

Home birds weren't home. HK was sittin' a dead tree it the GC just 'fore noon. Didn't really want the shot but recorded it anyhow. Spy an ole gal out on the GC with a camera onna tripod. Dash thingy read 32º 'n ya can see the flag in the breeze. She goes back to 'er car, drops the tripod gets sumthin' else, goes back on the course 'n starts closer ta the tree. Put the camera on the bird cuz I saw 'im watchin' 'er 'n he spooks when ya get too close to his roost. *POOF* Got 'im in the air.

Been it the spot I was in but usually out the station wagon cuz I been wantin' a shot of him 'n the GC's flag in the same frame. Didn't have time to get out so I shot it through the windshield. Ain't the best but I got it 'til I get a better shot.

The animal bleedin' hearts say they wanna be free. That's the case stay outta my man-made structure, enjoy the 31º temp 'n the breeze. Eagles ain't tryin' ta sneak in.

Guessers sayin' close to 40º, sunny 'n a breeze. Should get rid the trace of snow what's still here.

City of Portsmouth had a contract with the Portsmouth SPCA, a no-kill shelter, ta take strays. Employees of the shelter were 'adoptin'' the things then dumpin' 'em all o'er the area includin' up ta Williamsburg. An employee found on she dropped squished in the road, freaked, 'n reported the practice ta the commonwealth. City attorney declined ta sue.

Wonder how many of 'em ended up here. Ain't got coyotes in Kempsville - yet. Do have fox but I don't think they prey on 'em.

Bowl of Lobster Bisque soup & a Mojo Pork sandwich for dinner , bought it at the concrete pantry.

"SHE" made a salsa called Texas caviar .....

Boils some apple cider vinegar with some sugar ....allows to cool ....

Pinto beans, Black beans both drained , add chopped celery, onion, green & red pepper add the cooled vinegar solution...
chill and serve with tortilla chips.....

very colorful, and Sooooooooooooooooooooooooo good !   ;D as a salsa or a even salad.

Mid twenties 'n guessin' to mid forties. Not much air movement. Didn't feel as chilly as yestitty when I put the cans containin' my donations to the city at the curb.

Be spendin' time sittin' it the home nest taday. The pair are steady werkin' on it. Fat lady caught 'em doin' the dirty in the tree yestitty shortly past 1700. Less than a hundred yards from six lanes of rush hour traffic.

Gonna put 'nother mug fulla grits 'n cheese tagether. First batch didn't fill me. Dunno whether I'm wantin' Mexican or Italian for the evenin'. Figger it out later. Might not be either.

OK we're all cooks to some degree around here, my book is not for beginning cooks, hundreds of books out there for that, a degree of skill with a dutch oven is good, but there is enough information there to teach a newbie or to teach a charcoal briquette/cooking table patio dutch oven to cook in a historical camp.  Also the recipes have a little facts about them as to why I do them and why I do them the way I do in camp.

Most of us don't follow recipes to a letter, to a degree I'm writing my recipes (receipts for those who can't spell recipe)  to convince people they can vary off course.   In my mind there is no reason to have a recipe for vegetable soup, but it's such a good camp dish I decided I should.

I know some besides me have used camp ovens, if not, you know I could teach you in a weekend.   So lets say you know how to use them, and you have decided to do historical camp cooking, have never made vegetable soup and wonder how to make it period correct, does this seem good, not so simple someone don't understand it, yet not so complicated it is hard to understand.   

The hardest part of the recipes is getting them right in words so someone knows how much to use, since I just do it and it comes out just right for the oven.   




A little background on the first one, the ever popular Vegetable Beef Soup, today we often use all or part canned or frozen vegetables for making it as well as using hamburger for the meat, I would first refrain from using ground meat in camp, today by careful buying and cutting a cheap roast into stew meat, the savings would be little or nothing over hamburger and in most cases till very close to the end of the period, ground meat would have been more expensive (see beef).   The other is period recipes say to use what ever vegetables are in season; one must remember canned goods were still expensive (although by the end of this period the cost had dropped a lot) and frozen vegetables simply did not exist.   This is not to say to not use these items, but for a more period demonstration they need to be low key.   Also most modern recipes call for premade broth instead of water; if you have good meat and simmer it proper you will have broth without the extra cost.  Although the following recipe is called Beef Stew, other meats can be used such as venison, pork or even chicken if desired.   

Today most vegetable soups are going to end up with the pretty much standard, onions, potatoes, carrots, peas, corn and green beans or some combination there of.   Looking over recipes and notes from the time, one seems a lot more variety since people grew or bought a greater variety of vegetables than today and used them in ways seldom seen today.   An early spring soup would often contain lettuce, radishes, peas and turnips, perhaps some carrots or potatoes if any had survived in the root cellar.  Later on things like new potatoes, carrots, green beans and cabbage would be added to the mix and by fall rutabagas and salsify could end up in the mix and by winter mostly items that stored well in the cellar would be seen such as cabbage, winter squash and root vegetables.    Barley was sometimes added, often in winter when fresh vegetables were scarce.  I like some tomato in mine so I often add some canned tomato if fresh is not available.   

As far as amounts of vegetables a ratio in volume of around 1 to1-1 1/2 of vegetables and water is about right, for reference most common vegetables; 1 pound will make 3-4 cups of chopped vegetables, depending on how fine they are chopped and the exact type.   

Vegetable Beef Soup 

3 pounds of beef (shank or chuck is fine)
12 cups (2 ½ quarts) of water
12-18 cups of chopped vegetables (4-5 pounds)
Salt and pepper to taste

Optional

28oz can crushed tomatoes
1 cup pearl barley
Herbs of your choice (I like a little rosemary) Cut up the beef and brown it will, adding the water and the salt, pepper and any herbs desired.   Simmer on a low heat 1 hour or until the meat is tender and a good broth is formed.   Add the vegetables and simmer low until the vegetables are tender, about 1 hour.   
If using the barley reduce the vegetables by about 2 cups, if using the tomatoes reduce water and vegetables by about 1 ½ cups each or one can simply go to a 14 inch deep dutch oven.

If you do a lot of looking around, it is really almost any Veggie beef  soup recipe all added together and divided out to make a recipe that fits a 12" deep dutch oven or can overflow into a 14".  LOL when you really study recipes there are really just basics tweeked to fit the individual taste.   That's what I try to teach in cooking, learn the basics and teak them to what you want.

We are supposed to have rain this weekend, so the vegetable soup will be a viable option. I made some whole wheat pancakes for my late breakfast. They turned out good enough that I am full. No plans for lunch and no clue for supper.

Simplicity is what I want in recipes, but this does seem to confuse a lot of people. 


Beef Stew

To turn the above soup into a beef stew, take 1 ½ cups of cold water and stir in either 1/3 cup (6 tablespoons) of corn starch or 2/3rd cup (12 tablespoons) of flour to make a slurry.   Add to the soup and stir in, let simmer while stirring for 5 minutes or so, remove from heat, stirring occasionally and it will thicken as it cools.

Made an ole gal's day. Post office in the Ace Hardware. Somethin' was said 'bout an eagle stamp. Tolt 'em soon's I got outta there I was goin' 'cross the street after real ones. Asked where 'n I told 'er. Said she saw 'em while she was walkin' with a neighbor. Neighbor tolt 'er there weren't no eagles here. Thanked me a bunch 'n said she knew damned well she wasn't crazy. Told her I didn't know about the crazy part but she probably wasn't seein' things.

Birds werkin' the nest heavy. Saw three flights for buildin' materials, includin' a big hunka grass.

My mid range is whats going on me, 'bout right where SWMBO's voice hits ::) :o Hate wearing my aids, definately can't work with'em, and can't play with'em in either. Get this kind weird echo effect, throws off my intonation.Batteries are finally going south after almost two years. They're rechargables and run $50 a pair. Not available other than where I got the aids or another hearing aid specialist. The rechargeable part was what got me to get'em, kinda like the shock them Prius owners get when they gotta replace those batteries in those cars ::)

They tell me they won't help me or so they said about 16 years ago, actually do pretty well  as long as people use a little curtsy, they need to be taught that if you have a higher pitch voice talking louder only makes it worse as the pitch goes up, face me when you talk, be in the same room, my left is much better than the right so if I'm driving it's best to shut up and not worry about it.   ;D

Arcey, was driving to an interview about 12:30 today as I drove past a stand of trees I noticed something in the field about 20 feet away. It was a large bird having a snack and at first I thought Turkey Vulture, they are all over out this way. When I was about even with the bird the head came up to see who was disturbing its repast. Bright white feathers on the head and a large yellow beak, I don't know which one it was or if there is a new one in the area, but it is the first I have seen since HK was out by the prison. Of course I was in a hurry and didn't have my camera.

I got the high polish blue, bought 5 pack of Chip McCormick of magazines off eBay.

So far I've had some generic gun show Military ball ammo, some Winchester FMJ's & some hard lead pills from Space Coast Bullets
reloads through it, with no hiccups....

It impressed even a die hard Les Baer Custom guy, who calls himself a Les Baer snob  ;D

Sorry about the snow, Major. This is usually the time that we get bad weather around here. The Stock Show seems to attract the bad weather. M2, I bought 6 of Chip's mags, a Merinckle Wild bunch holster, and 2 matching double holders. I will be ready for a match, when the pistol gets here. I got all of my trip stuff done yesterday on line. I will get there about noon on Thurs, and I am booked for 3 days. I will be at the Ramada with you guys. I also got a rent car as well. Iam flying again, it only takes an hour to fly up there.

Naw, not really yuppies as such, would be more people who already know and want to get rid of the Kingsford crutch or learn right from the beginning.    Guess you could call it de-yupitizing them.   ;)

Plenty out there teaching modern charcoal, few teaching wood, ain't hard, have taught several, even taught Slim on day by phone, sitting on the cab of The General to get a good signal and my coffee pot and a cup.   ;)

Got to clean the kitchen up after work, wife made something for her pot-luck for her all day scrap-bookin' thingy.   ::)

I carried pease porridge to her Buick this mornin' in a crock-pot,  lol she decided to check the net even though I told her I had a fresh recipe I made in my files.   Yeah, she said she should have looked at mine, hers is OK, but why be happy with that.   ;)

I have 25 lbs of KIK BP coming from Powder Inc. Arrived in Little Rock this morning. Probably here on Tuesday. Loaded a bunch of shotgun shells this week for the upcoming season and ran out of FFg.

'Tis 25 and overcast. High of 30.

Grab a piece of biscuit dough in your hand and make a biscuit when done that is about the size of a small cat head.  As in this, that's a 14" shallow and them look about 3" across, I think they could be called cat  ;)heads.

This is the recipe I pulled up from somewhere and That’s what they called them:

Southern Cat Head Biscuits


Ingredients
--------------------------------------------------------------------------------
2 cups all-purposed flour
1/4 tsp salt
2 tbs sugar
4 tsp baking powder
1/2 tsp cream of tartar
1/2 cup vegetable shortening
2/3 cup milk

How to make it
--------------------------------------------------------------------------------
Preheat oven to 425
Mix dry ingredients in large mixing bowl
Work in shortening with a pastry blender until you have a fine, irregular mixture of small crumbs.
Add milk all at once and stir with fork until dough comes together.
Turn out on lightly floured surface and GENTLY knead dough no more than 12 or 14 times. This is the critical step. If you over knead you will develop the flour gluten and have tough biscuits.
Pat dough lightly until it is slightly more than 1/2 inch thick
At this point you can use a sharp knife and cut into squares or other shapes or use a 2 inch round cutter or empty can. If using round cutter, press scraps together and form a couple of extra biscuits.
Place at least one inch apart on ungreased baking or cookie sheet.
Bake for about 15 minutes until puffy and browned.

"Cat head biscuits" does seem to be a primarily Southern term.?
Del is correct, one pinches or "chokes" off a small amount of bread dough during the bread making process. (the dough is usually a bit more moist than you would want for bread making)
This in turn is "Pan" baked and/or baked in a sallow Dutch oven, as Del has done.
This method can produce biscuits for the eating while the Bread dough is style rising for the baking of a soft bread loaf.

The dough is always supposed to be more moist for biscuits than for a yeast type bread, also the less you work a quick bread the better and you can't knead a yeast bread too much.

Had just a sprinkling of rain earlier. Spent part of the afternoon fixing some fence, and brought home a few chunks of wood I had stacked up earlier, to split for the stove.

Wonder if Southern Cat Heads are any different than Eastern, Northern or Western. Or maybe even Midwest Cat Heads.

Cold here with the wind. Golf course birds were playin' in it waaaaaaaay up in the air. Outta my reach. Pretty ta look at tho. The birds next door were in the nest second check. They've built the thing with a bowl so derned deep when they get in the middle 'n bend o'er they disappear. Think when they're sittin' eggs we on the ground ain't gonna see nothin' 'cept for shift change time. Did manage ta get some flight shots.
