Seth,

While I have an iron frame 1860 Henry 'One of One Thousand' sold by Uberti USA, there's not much to say about it. Other than the marking on the top flat of the frame and a cartouche on the right wrist of the stock I can't see anything out of the orinary. It has the case hardened frame and is in 44-40 and falls in the 194XX serial range. Hope that helps.

The "One of one thousand" series was just a sales ploy by Navy Arms some years ago.  There isn't anything special about these guns other than they have the One of one thousand engraved on the top of the frame.  Val Vorget (spelling?) the owner of Navy Arms ordered thousands of them from Uberti for sale in the US.

Life is not a journey to the grave with the intention of arriving safely in a handsome, and well preserved body; but rather to skid in broadside, thoroughly used up, totally worn out and loudly proclaiming...."WOW!... What a ride!"

I used to own one of these Uberti Henries with brass receiver in military version, marked One of a Thousand. S/N was Z811. Apart of the OoaT marking there were no other special marks on the rifle.
If memory serves she was made during the early 1990s in .44-40. I purchased her ca. 2004, had her converted to shoot .44 Colt by setting back the barrel.
I recall that exclusive German Uberti importer/dealer HEGE had a promotion going for these OoaT Henries during the late 1980s/early 1990s with the claims that they have selected parts and wood and special fitting. Regarding the latter I can confirm that fit of metal to wood on my a/m #Z811 was nicely executed, much better than on the steel Henry I got in 2006.
Back then you could order them from HEGE with brass or steel receiver. HEGE hade a special promotion offering an OoaT combo with brass receiver of regular barrel length and a shorty, ca. 20", in .44-40 with the serial numer of your choice.

My CCframe is so marked and I was soooo lucky that they sold it to me for the same price that the common standard models were selling for and I didn't have to shoot in no contest neither.  Funny thing is I did not think the iron framed versions ever reached a thousand??

The truth be told, Winchester only made '73's, and maybe '76's in the One of One Thousand series.
