When I was a pup and still hung out in "joints", I made many a meal of beer, pickled eggs, pickled pigs feet, and other such assorted volatile repasts. My pole buddies was always a bit wary of me 'til past noon.
Y'all mentioned po'k rinds, got me ta meremberin'. Used to get fresh cooked ones from a mexican tortilla and meat place in Santa Ana, CA. They had fresh on the spit carne pastor, pork, lamb, and fresh made tortillas, and fresh salsa every day. When ya' went in for lunch, they cut the meat right off of the spitted roast, and the tortillas were hot. The rinds they sold still had a lot of meat on them, too. MMmmmm, good. They had menudo, and tamales on Sunday, too. I enjoy a good pot of menudo, but just don't get it much; the Bride can't get past the tripe idea, so posole has to do for a reasonable substitute.
