I have a couple recipies for squash/zucchini; stir fried, grilled, zucchini cake/bread, and chicken primavera casserole... but we've had them all several times. Does anyone on here have a favorite recipe that they'd share to help give us a little variety? I'd trade you some squash for it ;D
I've made zuchinni like fried green tomatoes before, it's pretty good that way.
My daughter-in-law cooks it with a small amount of water and beef boullion cubes. It's good that way too.

When I was in the salon - Helen Hinkle used to bring me a small casserole made with zuchinni and chicken stovetop stuffing mix -- It was delish!! I could hardly wait for night so I could go home and heat it up.

ZUCCHINI & GROUND BEEF CASSEROLE
1 lb. ground beef
1 c. chopped celery
2 c. sliced zucchini
Salt & pepper
1 (8 oz.) can tomatoes, cut up
3 tbsp. Worcestershire sauce
1 tsp. sugar
1 tbsp. flour
3 tbsp. grated Parmesan cheese
Brown beef and celery in skillet, remove with slotted spoon and set aside. Saute zucchini in pan drippings until lightly browned; remove with slotted spoon.
In greased 1 1/2 quart casserole alternate layers of beef mixture and zucchini. Sprinkle lightly with salt and pepper. Stir together tomatoes, Worcestershire sauce. flour and sugar; pour over casserole. Sprinkle with cheese. Bake in 350 degree oven for 40 minutes or until bubbly.
One of our favorites is the one that has stuffing on top. If you don't already have it, I'll post it.

Diane, I have seen several recipes on the internet that have or are stuffing, but if you have a recipe that you know works, I'd rather have that one. 8)
Summer squash casserole 350 oven 9x13 baking pan
2 lbs young yellow squash, or zucchini or some of each
1/4c. melted butter
1 8oz. package herb stuffing mix
1 cup shredded carrot
1 can condensed cream of chicken soup, undiluted
1 cup sour cream
1 med. onion, minced
black pepper to taste
Slice and quarter squash into chunks. Cook in some water until barely tender, drain well. Mix the soup and sour cream together. In another large bowl combine the cooked squash, shredded carrots, then fold in the sour cream and soup mixture.
Mix the melted butter in with the stuffing mix and cover the bottom of a 9x13 baking dish with some of the stuffing.
Pour the squash mixture over the stuffing, then layer the rest of the stuffing on top.
Bake at 350 for about 45 min or until hot. Serves 12
This can be easily halved or placed in smaller baking dishes to share.
I often take this to picnics and things.

Diane, that squash recipe is wonderful! I made a half batch, but forgot to half the stuffing, so it was a little crispy on top... but you kow what? It still tasted great!
All of these recipes sound so good. But, I still love just sauted zucchini with a little onion
and I add about half a cup.....depending on just how generous my arm is...of parmazan ??? I know that is mispelled.
Shaker cheese like you put on spaghetti......
and I can eat a whole one of these. I also add a little cracker in my case it is
a Ritz to the top of the dish.
One large zucchini would feed a couple of people......unless you are like me and eat the whole thing as a meal.

Joanna, I'm glad you liked it. Judy, your sounds good too. This time of year we often just have fresh veggies and call that the meal.
We like squash, tomatoes, onions and jalapenos stewed together. Ted can eat bowl after bowl of it. I also make it for several fellows here in town and it isn't uncommon to find a sack of squash on my porch. So I make a big batch and pass it around to the usual suspects. :D :D
