Title: Carrots in Peanut Butter Sauce

Very simple and very tasty!

Peel carrots and cut to desired size (I usually cut them into "coins" and fix about 2-3 cups' worth). Cook, covered, 10-15 minutes in 1 cup water (with 1/2 teaspoon salt added, if desired). While carrots are cooking, in separate pan prepare a white sauce with 2 tablespoons butter or margarine, 2 tablespoons flour and 1 cup milk. Stir until thickened, then add 1 tablespoon creamy peanut butter. Stir until mixed in. Drain carrots, add to white sauce and mix gently. Serve and enjoy.
