Title: Roasted potatoes aka Mountain Man Breakfast

Roasted Potatoes

This is a simple easy dish that can be added to, perhaps one could almost think of it as hash that is roasted and not fried, either way it is an easy dish that takes little prep time and requires little after that.   I will start with the basic potato recipe which makes a good side dish and show options after that, with eggs, meat and cheese the recipe shows up a lot using frozen hash browns and is called a breakfast casserole and in many cook camps it?s done with regular potatoes and is often called ?Mountain Man Breakfast? despite the fact that very little in it would have been common in the Rockies in that time period. 

I prefer the sweeter, waxy type potatoes such as some form of red or yellow, (see potatoes) but it can be made with a starchy type such as Russets if preferred. 

The recipe is listed for a 12 inch deep, if using the basic potatoes only; more could be fitted if desired, but writing the recipe this way makes it simple. 

Roasted Herbed Potatoes (for 12 inch deep)   
5 pounds of potatoes (peeled if desired and cut into small cubes.)
1 onion if desired (peeled and chopped)
1 tablespoon of butter, lard or bacon drippings)
Salt, pepper and any herbs desired.  (I like dill weed, oregano and/or ground cumin)

Melt the fat in the oven and spread it around to keep potatoes from sticking, layer the potatoes,, seasoning them as you go as well as adding the onions or just mix them together in a large bowl and place in the oven.

Spread a very light layer of coals on the ground and place the oven on top, then place enough coals to bake in a moderate oven for around 45 minutes.  (The secret here is to do the majority of the cooking from the top and have just enough coals to warm the bottom well.)   All optional variations bake the same.   

Options (Cheese)
Take 1 pound shredded cheese of your choice and layer it with the potatoes, covering the top well.

Options (meat)
Take 2 pounds of ground sausage, chopped bacon or chopped ham and brown well in the oven, remove, drain excess grease and layer in with the potatoes, by using the same oven the extra fat in the bottom will not be needed.

Optional (eggs)
12 dozen eggs (beaten)

Pour evenly over last layer of potatoes; add the cheese on top after pouring in the eggs.

Have you ever tried this with red flesh sweet potatoes or white flesh sweet potatoes?
