Egg in a hole

We had a slight hicup with our bread machine and the centre of the loaf was somewhat crumby. So my personal wayback machine kicked in and I came up with a breakfast treat I was introduced to in Germany. When I first went over we were part of BAOR, British Army of the Rhine. Accordingly we were exposed to bits of Britrivia. Like survivors breakfast at 4:00 am after a ball. As a single officer I lived in quarters, only steps away from the bar and dining room. We had a key to the kitchen in case us nice young officers got a bit peckish after a long hard evening propping up the bar or playing liars dice. One of our favorites was Egg in a hole.

Start the bacon in a fry pan, cook to taste, remove the bacon,

Leaving the fat in the pan, get a slice of bread and tear a hole in the center, flop the bread in the pan and flip to soak both sides,

Break an egg and drop in the hole and cook til done to taste, Note; fry up the "hole" at the same time.

Enjoy, along with one last beer for the road. It was a good thing that our beds were only a short walk away!

If we were too blind to find the eggs, flopping a slice of bread in the bacon fat and frying up got you "Fried Bread"

I was introduced to this as a TopHat. Instead of tearing a hole, I learned to flip a drinking glass over, using it as a sort of cookie cutter. Simply Pat the bottom of the glass, and your TopHat pops right out.

  I have heard this dish referred to as "Toad in the Hole" also!

Toad in a hole is a deep dish of sausages covered with Yorkshire Pudding dough and baked. For Y'all, yorkshire pudding is the same as "popover".

Equally as good, and probably why I put on two pounds in one day!

I?ve never made my own but I like the ones that Cracker Barrel makes. And they toast the little circles of bread so you still get something to dunk into the yolk. Mmmm. But then I can eat breakfast any time of the day.

It was called egg in a basket but they may not do them any more. Been a while.
