So say a person found an M1880 knife that had an iron guard but a damaged handle. Are there custom knife makers out there that can make a new but correct handle and install it, and can anyone recommend one?

Blade magazine should have a list of custom knife makers.

I think Tinker Pearce, who has made Remington and Colt shorty pistols, is a custom knifemaker. I remember a SCA knifesmith, by that name. He posts on this website.
