Found this video if you're interested.

I first discovered my fondness for stuffed jalapeno's while in Texas on location.
They called them Armadillo eggs (the pepper was stuff with cream cheese no bacon wrap)
Later, at one of the NCOWS Texas Regionals, a caterer for the awards banquet serves
 bacon wrapped cream cheese jalapenos. I was D.

I make mine much as this guys does, but without the jelly...though I think I'll try them next time with the Bacon Jam I get at the horse feed farm and ranch.

The MagTech 2-7/16" shells should duplicate the 2,5" shells that the 1887 was constructed for pretty closely.
Back in the day the 2,5" all-brass shells would have been roll crimped too.

I have an early-production Norinco 1887 chambered in 12/70.  I use un-cut, un-crimped MagTech all-brass shells, but do not load them from the magazine; I put one in the chamber and one down on the cartridge lift.  I have done some smoothing of rough edges inside the receiver / chamber area, and this set-up has served me well for years in CAS-mainmatch.

I will have to do some more experimenting with paper or plastic shells in order to make it feed six shells from the magazine for Wild Bunch.

Made up some cream cheese bacon wrapped jalapenos, and they are chilling in the Refrigerator.
I'll cook them today for lunch.

"SHE" does not like them, and there for feels I SHOULD NOT have them !
I on the other hand LOVE them and make them for me  :)
Frankly, my favorite snack ;D perhaps bacon wrapped little smokie's a distant second place.

The store's freezer dept. cheddar cheese stuffed jalapenos, of which "SHE" tried once to in force on me,
pale in any comparison to cream cheese bacon wrapped jalapenos.

Seeing as how deaconkc has the stove going for the stove going for the coffee and Coffinmaker has made this into a Brunch hand Russ tosses in a baked diner of meat loaf and baked mac&cheese.
