Oh, with that kind of teaser, I had to Google that!

At first I just looked for "cabeza de vaca" and got a bunch of sites talking about one of the first Spanish explorers in the land that came to be Texass. So I searched for the entire "Barbacoa de cabeza de vaca."

Barbequed cows head.

Folks have preconceived notions about things.  It just sounds bad, but actually tastes pretty good.  Pretty much of a hassle to prepare it the old fashioned way (buried in ground with hot coals, etc), but can be prepared in an oven if you're not a traditionalist.  If you are traveling through South Texas through small towns, you'll find small grocery stores and ice houses (mom & pop convenience stores) selling this on weekends.  They'll have an electric roaster outside and sell it to you by the pound wrapped in foil, or by the  piece wrapped in a tortilla.  Sposed to be good for a hangover, but I don't believe that, 'cause my belly's still hangin'over my belt buckle.  ::)

I fully admit my bias against eating cow's head is preventing me from doing so. I've eaten snails, I've had blood pudding, I like liver. But... nope, that mental image of eating a cow's nose, brains, and the gunk from its sinuses... sorry.. no can do.

They remove the eyes, ears, tongue and skin, and it is really cleaned out.  You probably eat the same thing in processed lunch meats and just don't know it.

Hee-hee!  it's really amusing to take a non-exposed newcomer to a Mexican mercado or carniceria in the southwest, and watch their reaction to the stuff in the meat cases.  My bride refuses to go into one of those places, and she's not a newby, either. ;D :D :D

Hard to believe the founder and moderator of this most welcome addition to a most enjoyable forum not only has a weak stomach, but appears to have a prejudice against genuine (PC) recipes.  Reckon I'd best not post my Hogs Head Cheese , Blood Sausage,and Brains and Eggs recipes. ???

I'm really crushed  :'( that you would think that.  I learned a long time ago that every time I had "tongue in cheek", I ended up biting it (French kissin' excluded):D.  Only recipe I've posted that I haven't tried (either cooked myself, or tasted someone elses effort) is the SOB Stew, and that exception is only because I cant get all the makins'.  You really know how to hurt a guy's feelins.

 The Greeks also have a recepe for cooking a COWS head...waste not want not. Grandma used to make Hog's Head cheese years back when we raised and slaughter our own hogs. Good stuff. I for one will try anything once including squash (for Trinty)

My dad loved head cheese, and I grew up eating it.  Haven't had any (head cheese) in quite a while.

This is the only photo I could find, and what I remember seemed to be more gelatinous, with the meat chunks being a bit farther apart.  But then, it's been a "couple" of years since I've partaken.

With the "Mad Cow Disease" scare the cow's head thing is not considered safe.   Just a thought for anyone wanting to try it, there is a warning out on cow brains.
