Sounds tasty... never tried a "Spanish style" roasted pork, but it probably isn't a lot different than Phillipine version, "lechon baboy" slow cooked over coals on a spit. (Wife is Filipino) That's the usual special occasion menu there. Preferred size of the pig is about like a Javelina, they don't use big 250lb+ hogs for that.

How do you fix your Deer meat . My wife likes to fry with onions . Cooked over a wood campfire is a great way also . We also love to barbecue it , served with baked beans and tator salad and a slice of pecan pie . How do you like to prepare your Deer meat ?

99% of ours gets sliced into steaks and fried, tenderloins just get sliced and fried in a little oil, where some of the tougher cuts might be marinated and fried, or maybe tenderize it with a meat hammer and breaded. Sometimes might make a stew with the small scraps, though.

I make mine into everything.  Stews, Pates and terrines, spaghetti sauce, roats, etc.

Braised venison is great, slow cooked over a wood fire works, fried with seasoned flour in bacon grease never hurt my feelings either.  I had a German chef make me some had a tad of vinegar in the sauce, was terrific.

I know what I want my wife to fix for supper tomorrow night  . I want HER to cook tenderloin , fried with onion . I hope she will also fry some taters with it . She is a good cook , and  I'm damn lucky to have HER .






I have a new way of hauling my rifle around this summer .

Well it's almost Squirrel season. I have my double barrel ready and my black powder shotgun shells loaded for hunting . When season opens we always use shotguns , then when the leaves start falling we break out our rifles .

Deer season is about 2 weeks away . After work I got a chance to pop a few rounds . My 73 is ready for Deer season . And I have my vacation lined out for the opening weekend  of rifle season . My plans are to camp for the week . Who's READY ?

Nice deer Rowdy, what will the rack score?  I'm always jealous about you guys that can use rifles for deer,
here in Iowa we can only use shotguns. I'd love to use a Winchester for deer. Let us know what the green
score is on your rack. P.S. nice looking shirt, Pam wonders if you have it wore out yet.
