Greetings My Dear Forty-Rod
It is my inestimable pleasure to be able to pass along what little information I have on said subject...the basic concept of "convection ovens" is to use a fan to circulate the heat more evenly and thus allow more even cooking of your goods. It is es useful in a small unit like a toaster oven, when the top and bottom heating elements often put out differing amounts of heat, and further since the heat rises, the bottom of the food, especially like a pizza can become burnt whilst the top never quite cooks thoroughly...

However, a high-temp blower adds yet another piece of complexity to the blasted gadget, and both myself and my Lovely Spousal Unit prefer the large GE oven range, substituting shear size and watts to achieve uniformity, often using a casserol dish
much like a dutch oven.

That is perhaps the most famous train wreck in history, even though the Blues Brothers didn't know the song, most everyone else does. ;D
