……..let’s see your favorite recipes

Here are mine.  I organized my favorites by type:  Meats, Veggies, Breads, and Desserts.

Meats:  Beef-Macaroni Cheese Bake

Oven time 20-30 minutes

1 lb ground beef
2T onions, diced
2T butter (or margarine if you prefer)
Salt and pepper to taste
1 7 oz or 8 oz box elbow macaroni
1 can cream of mushroom soup
¼ lb sharp cheddar cheese, diced
½ C milk

1.   Brown beef and diced onions with butter in Dutch Oven Bottom
2.   Remove beef and onion mixture to extra pan
3.   Place 2 ½ C water in Dutch Oven, adding 2t salt
4.   let it come to a boil, add macaroni, cover and let cook down until there is very little water in the bottom, stirring 2 or 3 times during cooking to keep macaroni broken apart
5.   Stir in browned beef and onion mixture, add mushroom soup, diced cheese and milk and let bake at 300 degrees
6.   As dish bakes do not add too much charcoal at one time, to avoid curdling

Variation:  Use 1 pkg macaroni and cheese dinner, following directions on package


Veggies:  Escalloped Corn

Oven time:  Bake 30- 40 minutes

2 cans medium size cream style corn
2C crushed saltine crackers
3 eggs, beaten slightly
1t salt
3 C milk

Stir all ingredients together in Dutch Oven and bake at 300 degrees


Breads:  Brown Sugar cinnamon Biscuits

Oven Time 15-20 minutes

2 C basic biscuit mix or Jiffy
¾ C milk
¼ C brown sugar
¼ C white sigar
1 t Cinnamon
1 T cooking oil or butter, melted

1.   Mix biscuit mix and milk and roll or pat out ¼ inch thinck
2.   Mix brown and white sugars, cinnamon and oil/butter and spread over dough
3.   Roll as for a jelly roll and cut into ¾ inch slices
4.   Place in greased Dutch Oven and bake until brown at 375 degrees

Variation:  Nuts or raisins may be added, if desired.

Desserts:  Sorghum Molasses No Crust Pie

Oven Time:  (preheat oven 15 minutes); Bake 30-40 minutes

3 eggs, beaten
1 t lemon juice
½ t salt
1 C sugar
2T flour
1 C sorghum
¼ C butter or margarine, melted
½ C pecans

1.   Beat eggs in Dutch oven
2.   Add lemon juice, salt, sugar, flour and sorghum, beating all together
3.   Stir in pecans and melted butter or margarine and bake at 350 degrees.
