So, I like all things biscuits and have been playing around with some to hone skills. Especially looking at just eyeballing proportions and the plus being I get to eat the mistakes.
Oat biscuits
~1/2 cup of rolled oats, cooked with water, milk or buttermilk (milk or buttermilk makes a richer biscuit) usually requires a cup of liquid. transfer to a larger mixing bowl
While oats are hot, add ~3 tablespoons of butter and about 1.5 tablespoons of molasses. Stir and allow to cool.
In mixing bowl, add about a cup of self-rising flour. Mix, just to incorporate adding milk or buttermilk if more liquid is needed (depends on how tight your oats are.
Form into biscuits, i did it by hand, rather than roll/cut. Bake at 400 F for about 20-25 minuts, until toased on top.
I ate mine with apple butter, made for a nice breakfast.
