I was just about to start an November thread. Hopefully in 3 days all the political BS will be over and we can get back to our regularly scheduled program.

I hope so, for the most part I'm disgusted with both sides, I won't get deep into it but everyone wants the swamp drained but most keep voting for the same bog monsters, if after almost 50 years in office they ain't done anything productive why would you think they'd start now?   I'm to the point they should get a very limited time to do what they claim and then they should go quietly away, shut up and no pension or other crap.

I decided when i turned 18 I was going to be an independant and still am, still convinced belonging to a party makes you part of the problem, not the solution.  Yeah, can't vote in the primaries but figure both parties can show me their best and I can decide from there.   ;)

That's my philosophy Delmonico.
Except for some reason this election the GOP decided I was a closet Republican and I've been receiving from 4 - 8 e-mails PER DAY from Donald, Eric, Lara, Donald Jr., Melania, Sarah, Ted, and Tom, Dick and Harry complimenting me on how fine a patriot I am and begging for money. Every. Single. One. By now I've figured out Trump is desperate for money.

Morning all. Happy time change.

30 and sunny in Missoula today, supposed to get around 50.

I solve the political issue by registering as a republican and then voting for who I want. This election I voted third party on everything except president, which was a “hold your nose” affair.

In WI, you do not have to register with a political party even for the primary. I am not registered with a party.

I am resizing range 9mm Luger/Parabellum brass. I am finding some that have a slight "shoulder". Can you shoot 9mm Luger/Parabellum in a gun with a different chamber?

I get E Mails from both sides but I don't open them, why would I?  I just don't get the phone calls and the mail.  Wife gets some, I love the regular mail ones where they are going to save on waste and protect the environment.   Makes as much sense as me D friend from High School that drives his "lectric car to Estes Park all the time to his vacation home.  Gonna vote for the one that pisses both flavors of the swamp rats off, for good or bad it sends the message they should have been getting a long time ago.   We are tired of people sucking on the public teat 25 plus years more or less.

Yes, the base is solid and shouldn't expand when fired, as long as you size them as far down the base as possible you should be fine. Just check them after sizing in the chamber of the gun you want to shoot them in.

The Newest Citizen and I just got back from voting. As of about 1PM, there were 201 votes cast in our precinct, out of 488 registered. We're one of the more rural areas of our county. By the time the after work voters show up, we'll be way over the national average voter participation, I think. No waiting in line, plenty of time to chat with others at the polling place. After lunch, back to the re-modeling of our new abode. Almost done, just need to trim out the new floor, and fix a hole in the sheet rock above the sink, and we can be moving in! But still a lot of work outside, laying block (It's a double wide, and I dislike plastic underpinning-it'll be concrete) and some siding work on one end. Then push some more dirt around and build porches, so we don't have to wade through the red clay and climb the stacked up concrete blocks to get in.

Oh, and just to get some arguments going, lunch is chili- with beans. My Mom made it that way, and her mom....

Got back, went right in and voted, got given the pens so there is that. ;D   125 and 126 about 350 in ours, one if not the smallest precincts in town.

Laughed last night on the news they said people waited at the voting commissioners for 2-3 hours to vote early. ;D

Waiting on blood and pee tests, got pneumonia shot, was a question at the pharmacy if I needed one or not when I got the flu one.  PA did it, Kammie said to sleep what I needed and not worry about it till at least spring, she said it's no surprise I'm still not up to snuff.  ::)

Well, I've had pineapple and Canadian bacon before, but my usual is pepperoni, mushroom and onions. As a matter of fact, that was supper tonight. Home made(wife makes dough in a bread machine, I don't know why, I told her it's just as easy to mix up by hand, and cleanup is easier)

On the subject of Pizza ...I'm fond of the works pies myself.
I like  Meat lovers or Vegie pies just as well too.
I prefer hand tossed, brick oven wood fired or on occasion,  thin crust.
I've had Lobster on Pizza and gourmet specialty offerings.

What I don't care for is   ::)  pineapple, if I must, cause that's all some yoyo ordered  ,  I'll  pick that crap out.
and will avoid  (UCK) Anchovies entirely....

Don't care for the deep dish crusts
or Dominos' and Pizza Hut chains

Morning all.

Off to the diggins for another day scratching put a living. But first I have to go to the car dealership and see about getting a loaner car since ours is going to be there for another week.

Dominoes and Pizza Hut were the only two options on Sheppard when I was there. We usually did dominoes because it was closer and the delivery fee was a few cents cheaper.

No Sir... :)

Houses of Parliament.   HP Sauce

Since circa 1895 its first offering on British dinner tables.

Not as common as A1's in steak restaurants, because is  HP & Heinz 57 costlier , but if you ask some better places have it.

HP is made with
Tomatoes, malt vinegar (from barley), molasses, glucose-fructose syrup, spirit vinegar, sugar, dates, modified cornflour, rye flour, salt, spices, flavoring, Tamarind. Contains: Gluten Barley and Rye.

Tamarind fruit (a pod) from a tree grown in the tropics ...tasty stuff  :)  ( also in Heinz 57 )

A1's on the other hand is made with:
Tomato Puree (Water, Tomato Paste), Vinegar, Corn Syrup, Salt, Raisin Paste, Crushed Orange Puree, Spice, Dried Garlic, Caramel Color, Dried Onions, Potassium Sorbate (to Preserve Freshness), Xanthan Gum, Celery Seed.

and as Del pointed out..no longer has Anchovies ...

thanks for the coffee, please pass the Bangers and mash.

I can't relate ...with exception of anchovy's

I've eaten most manors of seafood , including in their own domain , things that could eat me !  namely grilled shark steak.

Quite possibly my very favorite is Green Turtle steak ( now no longer legal to harvest )

Abalone, Crab, lobster, oysters & clams, shrimp , all manor of fish , even Kelp ....

Currently 19, and we still have 4” from the weekend.

We aren’t supposed to see above freezing temps for about a week, so it seems fishing is out for a while.  My boss and his son killed 38 geese this weekend, so once it does get back a little warmer they’re going to break out the grill and have a company cookout. I’m not a huge waterfowl fan, but I rarely turn down free food.

Prof, yes we are good to go.... Generator, Propane tanks full ectara, ectara, ectara  ;)

Eta is ashore now inland from Cedar Key, well north of Tampa , winds now about 45mph at the center.
By afternoon it will be near Jacksonville and off into the Atlantic, good riddance.

It is still gray and upper level clouds are booking along , but just light breeze here, and an occasional stray shower.
For Us it was not much, afternoon Thunder Storms are more concern.
However, I've seen more than enough of these and the havoc they wrought to never let my guard down.

Thanks for the well wishes, Glad Johnny weathered well too  :)

Thanks for the Coffee,

dreariness of last weeks hurricane/TS storm finally left yesterday and it was partly cloudy and 81°.

But that all changes today as a cold front rolls through with a 70% chance of precipitation

Currently 29 and overcast. Had a little white stuff last night: just enough to require scraping the windshield.

Today’s plans include taking the future Mrs out to learn how to operate a firearm, in the form of an airsoft 1911 copy, and then going to do horse things.

Bought two primal cut strip loins today for $3.99 a pound, about 15 pounds apiece, said one per customer so we got two and went through different lines, wish I could have bought more, several of the same stores in town.   Got to play butcher tomorrow, $3.99 a pound for NY/KC strip is good no matter what you call it.   Costs about twice that already cut and I have sharp knives and a vacuum sealer.   Got 10 pounds store made 80% burger for $1.99 a pound.

I had my 51 Navy that way for fast draw competitions locally. It only got used for that purpose in that configuration. Once I quit doing that, it got returned to San Colt specifications, or at least Piettas interpretation thereof.  These days, the most I touch the trigger system is putting a D spring in my Beretta.

Engineered is the key word here, most people working on triggers have no idea what they are doing, the ones that scare me are the ones where they have it so cobbled up in won't fire anything but a Federal primer and people pay to have the trigger that screwed up.  My Ruger 32 mag has a very light trigger but will fire any small primer upto and including the CCI small rifle although my carry uses a Winchester small rifle (a legit swap but only on small primers never large).   It also will not fail the gun cocked but empty and the cylinder whacked a few times with a rubber mallet, late gunsmith friend of mine taught me that one when working on any trigger, rubber mallet it empty.

My Good Slim -

If that hollowpoint has a "post" in the middle it could be a Federal Hydras-shock

"Hydra-Shok ammunition features a unique, patented center-post design and notched jacket with a non-bonded lead core.
Together these design elements are meant to provide more reliable expansion and deeper penetration than other hollow-point ammunition.
Center post designed bullets like Hydra-Shok have more predictable results"

Food is in the early stages of preparation, though this year we are skipping the green bean casserole, in honor of our resident grumpy cosie.

I did something last night and was surprised by the result. I baked a pumpkin pie, and I put the pie pan in my cast iron skillet with the hope of catching any drips if the pie overflowed. Pie never overflowed, but the pan did some sort of culinary magic and made the crust come out perfectly browned without having to egg wash or cover with foil. I am confused, but not at all upset.

Just finished boiling the carcass in chicken stock and then deboning for turkey & barley soup.
And yes, still have a ton of regular leftovers, but the soup is a family tradition. It can be frozen and saved for another day.
We'll be eating Thanksgiving dinner all the way through Sunday . . .

Hope everyone had a satisfying holiday.

Slim, can't find your Email, Cas City won't let me message so I'll just post it here and you can go from there. ::)   Both probably went and stole my butter or some dang thing. ::)  BTW I gave my "student" an A on her pie, an A+ would have required 2, perfect crust, the rich taste of real not canned pumpkin and the pumpkin pie spice in the pie where it belongs, not in the dang coffee. ;D

Pastry Crust/Pie Crust

Good pie crust is simple to make, they do though tend to frustrate some people and pie crust is one place I do tend to measure rather than guess like most dishes I cook. I can make a pie crust guessing, but it is better to measure when making them.

Recipes for the crust vary, but just like many of the baking recipes of mine; it can be built off of a basic recipe. Pie crust does not do well making it in the heat, you can make a fair pie on a hot day in camp, but the quality will not be as good. I use lard in my pie crusts, butter can be used also as the whole shortening or as part of it, one should use ¼ to ½ more butter than lard when making pie crust. The advantage of the butter besides the butter taste is the water that is in the butter turns to steam when baking and puffs the crust up more, the disadvantage is the lower melting point over lard, the melting point of butter is right at 97F, the melting point of lard is 10-20 degrees higher depending on the type of lard (see lard) this gives the cook a bit of an edge on a warmer day. How the butter or lard is cut in makes a difference in the texture of the crust also, for a flakier crust cut it in with a pastry cutter till it is about the size of peas, for less flaky cut it in till the mixture is like coarse corn meal.

The type of flour used will also make a difference, lower protein pastry flour will make a flakier crust, and all-purpose flour will be a little less flaky, but this can be controlled by working the dough no more than needed. Some recipes call for a little vinegar added to the mix, this is not to give the crust a tang, but it helps prevent the gluten from making long matrixes that toughen the crust giving it a flakier crust. Adding egg will give a more tender crust and will also promote browning, plus give the crust a bit of an egg flavor. Adding a small amount of baking powder will also help make a flakier pie crust as well as lightly brushing cold water on top just before baking.

Basic crust for 2 crust 10 inch pie
2 ¼ cups of flour
2/3rd to 3/4 cup lard or 3/4 to 1 cup butter.
1 teaspoon salt
5-7 tablespoons cold water

Mix salt in with flour, cut lard into flour with 2 knives or a pastry cutter, sprinkle with cold water and toss with a fork one tablespoon at a time till mixture slightly sticks to the side of the bowl. Roll dough into a ball working it no more than is necessary, cover and let rest a ½ hour, place in a cool place if possible.
When using vinegar, just replace 2 tablespoons of water with 2 of vinegar, either distilled or apple cider, the cider type being the most common in the 19th Century.
For adding baking powder use 1/4th to 1 teaspoon per cup of flour, this will fluff the crust slightly.

If the butter used for the crust is salted butter, omit the salt in the basic recipe or reduce it by half if using a lard butter mixture.
For adding egg, one large egg is too much for the 2 crust recipe, before adding, beat the egg and remove 1/3 of the beaten egg, then adjust the water to give the same results. For a shiny crust you can add the excess egg to a little milk and brush the crust just before baking..

When rolling the pastry, a muslin cloth lightly floured lain out on the rolling surface will help keep the dough from sticking without adding much extra flour that will toughen the crust, a floured rolling pin sock will help also and these can be found in kitchenware stores.

Baking the pastry at a higher temperature will give a flakier and tenderer crust; this should be a hot (around 425F oven) if the filling will need cooked longer than normal, then reduce the heat after 10-15 minutes to keep from burning the pastry, do not just bake it at a lower temperature.

OK after these instructions it would seem that making a decent pie on the trail without refrigeration or even an ice chest would be an impossible task on a hot day, yet we read accounts of pies being made on the overland trails and the cattle trails in summer. The solution is simple, but not one you will find in a modern cookbook, instead of lard or butter the shortening used in the crust was chopped suet, true suet being the fat found in the body cavity of a beef, not the fat attached to the muscles, like on a good T Bone.

Suet from modern grain fed beef has a melting point similar to lard, the suet from strictly grass fed beef is higher about 122F and suet being the fat with the tissue in it, it holds together well when mixing the pastry. The beef of the overland and cattle trails was grass fed and even if they meat sold in butcher shops and butchered for home use on the farm was finished with grain, it was not as grain finished as most today.

Most of us know, suet was a common fat for use in boiled and steamed puddings that were popular at Christmas time, such as fig and plum puddings as well as others. The tissue helps keep the fat where you want it at the lower temperatures these are cooked at; lard would toughen the pudding by allowing the fat to flow freer.

If one wants to duplicate this, then today it is easier than it has been in the recent past, contact a supplier of grass fed beef about buying suet. Remove any connecting tissue and blood vessels and chop fine, then using the same or a slightly higher volume (1 extra teaspoon per cup or lard called for) compared to the volume of lard. This will allow you to make a very decent quality pie without the bother of having to keep the ingredients as cool as possible.

Okra, good stuff many ways.

Summer squash fried, naw, sauteed without coating yes or steamed but not a zuke the size of the Hindenburg, use to think Zukes had to be disguised like something else.

We raised okra in the garden three years ago. I am fond of okra.
One thing I learned, when they start to produce, harvest daily when they're around three inches in length. Very tender and tasty.

Wait too long and they're only good for craft projects to dry out and make rattles out of with the loose seeds inside the pod. As they dry out, they split at the lengthwise ridges and expose the white underlay, creates a striking striated green and white effect you can then varnish after sure they're bone dry. Drill the stem at the cap and mount on a nicely branched bough and add feathers or yarn. Great rhythm makers.

Did you know that cooking your kale leaves in coconut oil makes it easier to scrape into the trash? ::)

Morning all.

Today’s regimen has thus far included deworming a horse, frying eggs, and pulling a small car out of the snow with a 2wd backhoe. I am not qualified to operate a backhoe, but I didn’t break anything, so I’m counting it as a success.

Kale ain't nothing but a collard with a wrinkly leaf, cook them with hog jowls and some hot sauce and they are good.   Wrinkles just make them harder to clean and they cost more i the stores.  Collards would suck as bad if Yuppies tried to fix them. ;D

Slim

So I noticed.  One of this horse’s many oddities is that anytime he gets stressed, he gulps down water like it’s going out of style. So when we gave him the paste (while he was chewing his favorite treats),  he discovered it was too sticky to spit out and instead washed it down with about a gallon of water.

News from Montana:

It’s chilly. Had a little snow today. That’s about the totality of the day here.
