Birdshead grip on New Vaquero

So I see that some places like Midway are carrying birdshead grip frames (have an actual Ruger part number from the looks) but says single six, old model vaquero, blackhawk.  I know the XR-3 new is a bit different then the XR-3red but just how much different.  Could a decent gunsmith get these to fit a new model vaquero?

Got a pair of SASS 357 new vaqueros and would love to change the plow handle to a birdshead.

The "XR-3" and "XR-3 Red" are just grip frame shape designations.  All Ruger grip frames have the same hole spacing and are interchangable between the Single Six, Vaquero, New vaquero, Blackhawk, etc.  There is only one birdshead grip frame and it is used on all Rugers.
