Not a tremendous amount of published material out there, as I've been looking into the uniforms worn during the Spanish-American War, the Boxer Rebellion, and at Veracruz. Some related works have some useful photographs. Here are some I've used:

Equipping the Corps, 1892-1937: Vol 1, Webgear, Weapons and Headgear, by Alex S Tulkoff. As you noted, he doesn't have much on the uniforms, but there are some useful photographs.
The National Marine Corps Museum at Quantico has some uniforms from the Spanish-American War, and of course WWI, on display. You might contact them and see if they have any recommendations.
