  Elk steak seared to medium rare in olive oil with crushed garlic, home-grown heirloom straight neck squash boiled, and home-grown okra and tomatoes boiled until tender. All washed down with raw Jersey milk. Mmmm....life is GOOD!!

I use the term organic to indicate it's carbon  based as it really means.

No idea exactly when the food Yuppies hijacked it.

The Elk is a great Free Ranger and I love the meat they provide- your dish looks delicious

  I used the "organic" term tongue-in-cheek. I'm always amused at the length to which folks will go to buy what they call organic when those of us who raise our own eggs, vegetables and hunt for our meat know what's really.....well, organic.

  I love elk meat too but it sure requires lots of work to acquire. I'm quite satisfied with the venison that comprises the bulk of our households red meat diet.

I had a temporary part time job at a Rural King this year. One day I was checking out a very nice young lady who was so excited that she had moved out of the city and was putting in her first garden. She was getting a couple bags of organic fertilizer and when I called the load out guys I just called it manure over our radio. She freaked out, she had NO idea organic fertilizer was manure! She was like "Wait, I've been paying extra for vegetables grown in poop?" Everyone was trying to console her, she had no idea. A couple weeks later she was back in and this time bought 12-12-12 mix for her fertilizer.

 City folks are funny....I doubt many of them realize what goes in to "wholesome, natural" foods.

  When I was a kid we had a pen of layers, but we also had a batch of game chickens that ran loose, foraging for their own food. Their eggs were delicious with tall, firm, brilliant orange yolks, and everyone loved when mother used those eggs in her Thanksgiving and Christmas dressing. What these folks never knew was that the game chickens favorite meal came my show calves. Anytime one of my grain fed calves would raise their tail and expel a nice steaming green pile, the games would run to the pile, scratching through it, picking out bits of undigested grain, hay and grass. Ah, if the rest of the family had only known.....  ;D
