We have them near here (north) too. They look a bit like sandpipers without the long legs and have an extra long beak. They hang around marshy areas. It never occurred to me they might be edible.  Are yours a different kind?

A fleeting glimpse of Mrs. Foot was observed today by an early morning driver on K-99 at about dawn.

She was at the scene of the accident and was apparently lamenting the recent loss of her husband.
