Fiesta Rice

3/4 lb. boneless chicken, cut into small chunks
1/2 cup chopped onion
2 cups water
1 cup uncooked rice
1 cup chunky salsa
2 Tbsp. lime juice
1/4 cup peach preserves

Spray large skillet with pan spray.  Cook chicken and onion until done. Add water, bring it to a boil.  Add rice, lower heat and simmer until water is absorbed and rice is done.  Remove from heat, add salsa, lime juice and peach preserves. (Tracy likes to serve this as a side dish.  It also works as a burrito filling).
