2 cups sugar
2 cups water
2 cups vinegar
1slice of lemon or 1 tablespoon of lemon juice
1 teaspoon of cinnamon, cloves & allspice (tied in cheesecloth)
Boil sugar, water, vinegar, lemon and spices together to make syrup.
Slice cooked beets, cook in syrup for 10 minutes, and can.

Beets need to cooked and skinned prior to adding to syrup.
This will yield about 8 pints, can be doubled for larger quantities.

Ruth Vestal Zollars ,who used to be at Longton. Made good Beet Wine awhile back.
