"Saccharomyces bayanus"..

Where do I get this type of yeast?

I need some to make a new starter.
I have always used bread yeast and I want a stronger sourdough smell and taste..
So I am going to try a new starter.

*remember.. I live in a 1 horse town with no grocery store to speak of.
So the closest speciality store is 90 miles away in Wichita.

But I need some of this "Saccharomyces bayanus" ( I can't pronounce it) Undecided

I'm not Del, but I play one on TV.   Roll Eyes

S. bayanus is used in wine making...don't know for what...but if Del can't help, maybe I can.  There's a rumor that some folks make wines in California.

Ain't that the Champagne yeast?  I'll find out for sure.  I just got up from my nap and am headin' to work in a bit.  But through neglect while sick I killed my starter and have to go to the local wine making shop one of these next days.  I bet a package of yeast wouldn't cost me more than $0.39 to put in an enverlope and sent to Howard Kansas.
