Armadillo carries leprosy and can spread it.  Dont think eating one would be very smart! ,,DT

I was actually just reading something about this. Apparently only about 2% of armadillos carry leprosy, and properly cooking the meat will kill the bacteria, so it should be OK. But if you pick up the armadillo and it falls apart, maybe wash your hands before you cook it. ;)

As I understand it, only the Texas 9 banded Armadillo carries it.

Okra.  OKRA????  I don't believe mankind was ever intended to eat anything he had to cross his legs to keep!!  Ugh.  Or, Yeck!

Had the Great Apocalypse occurred, and were I one of the survivors, and were an Armadillo to cross in front of me, it would be perfectly safe.  If a Coyote won't eat it, me neither.

Kind of bummer that dillers don't taste good.  I swear I could eat one a day here in Oklahoma and I live in town.  I've only seen a live one ONCE though.  Kind of a big deal for me to see one that hadn't committed suicide by pickup truck yet.

My Grandfather's recipe for OKRA

Cut in cubes , dipped in buttermilk , roll in cornmeal , fried golden brown... and thrown the HELL OUT !
Nor would he eat Turnips , said he'd not eat what a Hog won't eat !  he did like the greens though.
There is more to the back story on his distain for Turnips however.

I've had Gator, & frog legs quite good....  Had snake once , never again

Armadillo , Buzzard , Rat  are not FOOD GROUPS !

There was a place on the river back home, it was called Conchy Joe's. Of course, they served lots of Conch, but they also had Gator Tail appetizers. Batter dipped, deep fried, and served with a Key Lime dipping sauce. One year at our semi annual "Secession Party", I served up some Rattler Bites cooked the same way. A little chewier than Gator Tail, but every bit as good.

I haven't ever had Rattler, but I have ate Bull Snake. Real tough. I'd eat it again.. if I was real hungry.

Seems to me the way to go would be to marinate it over night in your favorite libation. Next morning drink the liquid off of it, throw out the snake and go find something more worthwhile to eat.  ::)

About right, although like an almost raw steak or a hotter than hell pepper with little real flavor, it makes some guys think the have bigger danglers than they really have.

I ain't saying that snake meat is something I go looking for, but I don't throw anything away, and don't waste animals for fun. If I should bag a critter worth eating, I eat it. Snake isn't all that bad, but I'm sure it could be better.

I understand. Like I said I've eaten Bull Snake (for the same reason as you) I was just trying to be funny.  I guess I wasn't as good at as I thought I was.  :-\
As a serious answer, I would say that the idea of boiling it till the meat falls off the bone, then using it in Chili sounds like the best idea presented so far. 'Course once it's boilded off the bone you should probably be able to use it about anyway you'd use hamburger.

A food that takes extreme measures makes no sense. 

Like snails, most recipes call for more garlic than snail.  Why eat something that takes that much garlic to cover up?

A friend of my fathers fried up some muskrat one time, very pretty white meat, it was good. Kinda like squirrel or rabbit. But they would also eat eel which I wouldn't touch.

I skinned out a skunk once, and was very surprised at how nice and red the meat looked. Was real tempted to throw it on a fire, except I wasn't overly sure of how long it had been dead, amongst other things. It was given to me.

As for eel, I have never eaten it as a course, but have had it in sushi, and it shows up in Paiaia, along with some octopus chunks. Couldn't really say much about the taste of it though.
