Rumaki as a main course and appetizer

This forum has been pretty slow lately so I will post something to get things moving again.

Rumaki - an appetizer for those pre-campfire dinners. Can also be made as a main course. Enjoy.

Main course:
8" dutch
2 tubs fowl livers, cut in half
1/4 C soy sauce
1 tsp onion
2 T sherry or brandy
1 tsp brown sugar
Marinate 30 mins, drain
1 lb bacon, chopped, drain most of grease
Fry livers, drain grease
Can of sliced water chestnuts, drained
Add bacon, water chestnuts
Mix, simmer till chestnuts are hot

Appetizer while discussing the days cattle drive events:
Don’t pre-cook livers
Half cook bacon
Wrap liver, water chestnut in half slice of bacon, toothpick to hold together
Bake 350, 30mins till bacon is done
