I was cruising the UVIC library with my Alumnae card in hand, and I found this book. I recall seeing that West Point sponsored online versions of many old military classics so I searched and found it online through google books;

https://archive.org/details/handbookforactiv00vielrichWritten in 1861 by A National Guard engineering officer, Edgar Viele, as a field manual to introduce basic soldiering to the vast hords of enthusiastic but ignorant volunteers gathering for the Civil War. Google says that it was published at one time as two separate volumes, but here is the whole enchilada.
Delmonico will appreciate the 15 or pages of field recipes designed for the military ration plus what would likely be available to foragers. There is a two page primer for making various sorts of musket cartridges. The book starts with the mustering of recruits and their initial drilling, then on to marching, making camp, guard duty, and field manoeuvres, with a whole section on field fortifications. There is a lengthy section on field artillery, but very little on cavalry.
