Neats Foot Oil turns my leather too dark. Is there an oil out there that wont make the leather dark when applied?

The experience I've seen with EVOO is that it darkens it some initially by by the next day when it's soaked in, it is just ever so slightly richer looking. You may want to test that. As with all oils, apply a very, very light coat

Lexol Leather Conditioner is nice light oil that doesn't darken much - they also make a Non-Darkening Neatsfoot Oil.
Over time though all oil will oxidize and begin to darken the leather especially with exposure to the sun.
