Course my kids and their Sweetys are comming over to my house, they want Pizza and wine.......
Not much of an opportunity to strut my stuff...........
The whole fam damly is going to get together at my sis, and broinlaw's............a week later
TYQ's little sisters house.........
Their both in the auto industry,.........GM.......Both hurtin.........
I told TYQ I'd do the main course for the family dinner...............
I'm gonna do as much standing rib roast as I can stuff on my "Q"
That should be about $250.00 worth............
It is just so durn good.
I like seeing the little ones all going home with some leftovers..................
Alla that BS with the little Chefs hats on the upstanding rib bones is just BS............
I can easily get two wracks on my Q.........
I'm gonna knock the family on it's can.....
I told TYQ to tell al the gals to make sides and deserts...........
CK's doing some serious "Meetos"
It warms my heart to see all the 30 year olds with kids taking home rib roast and ham leftovers..........
I always gotta bring some Horseradish sauce, nobody ever thinks of it................
I love cookin for all my troupes...................
I got cops, lawyers, school teachers, hard hats, Commodity Brokers...............
Rental agents, Insursance agents, et all.................
I gots managers, Foremen, Mathimaticians...............
I even got knee bone, and hip bone changers.....................
If uncle Cary's cookin the main dish, their all gonna be there
I'm the cook from "heck" on the Q.........
I'll do the rib roasts, I'll do the ham..........
For family.....It will be my pleasure...............................

Doc, I'm not going to appoligize.....
That's part of what were "spose" to do to one another here.....
Del does it to me with ever'one of his pictures of dem dere Biscuits'ngravey, my favorite breakfast dere'iz..........
Welp, I finally made up my mind, for the third time as to how to do up the prime rib......
My first plan was to dry age them for a week in cheese cloth in the back of the figgerdator.
Bringing them out to clean off all the scale, spice them up with Horsradish, garlic, salt and pepper.
And put those two roasts in a large pan on the grill, just letting the bones be the grilling rack.......
That's a good plan and I'll try it one day............
Plan two was pretty close to plan one, but skipping the aging.......and Horseradish.....
It dawned on me I'm feeding little ones too, and I can't let it get too strange....
Plan three, the winning plan is going to be dirt simple..Went up to the butcher shop and ordered an large prime rib roast, or as close as he kin get to one. He'll bone it for me, so's I'll end up with 18lbs or better...... Also, with plan three, I get to try out my new pureed garlic injector......
I asked him to leave on the fat...... I'll take my garlic injected roast, put in a pan with a turkey rack to keep it off the bottom of the pan, put it on my Q at 275 for probably near three hours, or 125 degrees.........
Now I gots to haul the thing, 85% done, in the Blazer, 35 miles. When I get to my SIL's I'll crank up my BIL's Q to at least 400, take off the tinfoil cover, trim off some of the fat, and let it sear, and hit 135 on the thermometer. When done, medium rare, I'l plate it and start on the Au Jus............
Anybody see any holes in my plan?
I'm still going to do up a ham with Cloves and Pineapple slices in the traditional way.......

I picked it up early this morning......Gotta be two feet long............
I told him like 18 to 20lbs. he boned it for me........19lbs.........
He left me 1/2 inch of fat over the top.
I won't have much to trim when it's cooked
I'm going to puree some garlic in the morn, think Aolie Sauce......
I'm going to do it 90% in my kitchen oven, too nasty outside........
When I get to my BIL's house, I'm bringing a propane bottle just in case.
I'll pop off the tinfoil and put a sear on the roast.............
Just a little garlic.....I will let the Prime Rib be it's own spoksmen.........
I hit the bakery up town on the way home and got 4 doz. Potato rolls dusted with flour............
I gots two squeeze bottles of Horsey Sauce........
I'm going to bring my little Hobart slicer.......I'll make up a bunch of Prime Rib for Sammitches..........
I'll still have plenty for them who want a 3/4" slice.........
TYQ voluntered to do my Au Jus.......since I'll probably be slicing up a storm..........
Can't wait until tomorrow...........

Welp,.........
Got no complaint and sent everyone home with leftovers.......
Changed my battle plan a bit cause it's been so nasty outside.
I took off but a 1/2" of fat.
I tossed it in my kitchen oven after spice and garlic...
Let it rip to 425deg for 25 minutes then lowered the heat to 300deg.
I then just let it get up to 135deg........It came out medium rare when sliced in the middle, the ends were a bit more done.

I like mine rare, but medium is fine too. Most people burn those things 'till they aren't red in the middle anymore.
