I cook a lot of acid foods and sometimes even beans, but the iron has to be well seasoned, I also give it a fresh light coat of lard before I start cooking, don't really have problems, but you do need to recoat it good after.

I am starting to think an enameled pot might be better for the use I have in mind.  One pard on my posse got his from Walmart for $20.00.    He used it for chili at the NCOWS  Eastern Regionals.  I better get something soon as my wife keeps asking me if I have bought the pot yet.  At first I didnt know exactly what she was talkiong about.  ;D ;D

Deadeye, here are some sites that have a large variety of enemelware; I just "Googled" "enamelware".  If you google "casyt iron cookware, you will most likely get a slug of sites for that, too.  Sportsmen's Guide (ducking, now :o ::) :-\) used to have a bunch of enameled cast iron cookware that was undoubtedly imported, but the pics and the descriptions looked like it might be pretty good.

I have cooked a Lot of chilli in my Lodge 16" ovens (12 qt)  I used to use  a friends large MACA 17" ovens. (2)  (29 qts each)  Both ovens were very well Seasoned.  Like Del said Oiling-Greasing  them well before cooking in them helps greatly . I use precooked Bush's Pinto beans in a # 10 can.  I use 5 lbs meat,( ground beef or cut up Chuck Roasts) 3 # 10 cans of beans & 1 #10 can of  Hunts Tomatoe Sauce. I season all this with Williams Chilli Seasoning made in Kansas City. I like Williams very well because it has all the right amout of Spices I like & its premixed. The last Chilli Feed I did for my Church group I cook 10 gal Chilli, 4-16" Lodge Pots of corn bread ( I use the recipe off Aunt Jamina corn meal & triple it for 16" ovens) & 6-12" Lodge ovens full of Cobblers. 100 hot dogs & buns too. One Church family had an exchange student from Japan. Never seeing DO's before she was amazed. She had never eaten a Hot Dog or Chilli either. She Chowed down on both & liked it. When done cooking Chilli I make sure right away I wash out my pots wiith HOT Water. Dont let it stand & dry up. I always say "Take care of Your Pots & They'll take Care of You". Another Trick I've learned from a Preacher in Utah is using Ever Clear to Disinfect My pots. Spray some in & wipe clear. Wishbone-Ks
