Leo, that looks pretty good,  we usually raise a few eggplants in the summer,  haven't got any this year, just too cool too long, lucky to have some tomato's,  won't be too long before some of the new potato's are ready to start digging, got 2 neighbors that grow em every year. we always get a hundred pounds from em,  then we kinda vegg out, new potato's & green beans, onions, tomato's,   them new potato's go good with everything. ;D

Green Beans and New Potatoes, nothin' better than that.  I like to use new potatoes for potato salads.

Last year I went down to the neighbors when he was digging and picking up the potato's, he was sorting through and throwing back the ones golf ball size and smaller,  igathered about 10 or 15 lbs of them golf ball size and put em in a seperate sack,  we got 100 lbs of the bigger ones, but them little ones sure was good boiled with a little butter on top, they sure are hard to beat.
we had some of the Yukon Gold potato's last year too, first year he had planted them,  they sure were good in the potato salad, Jackie made,  I can make a whole meal on it while it's still warm. ;D

Never tried any of those Yukon Golds, they sound good for potato salads.  New potatoes are still my favorite with the skins left on.

Sliced taters, onions, butter, salt, pepper and a sprinkle of water.  Wrapped in foil and thrown on the grill.  Turned every so often, ‘til steamed and almost frying.  Good stuff!

Don’t look, Trinity!

From memory cuz it’s gone:

Lettuce, tomato, ham, cheese, black ‘n green olives, cauliflower, broccoli, grated carrot, sliced celery ‘n a half dozen or so slices of jalapeno tossed in for a wonderful surprise ever now ‘n again. All drowned in Italian dressin’. A few saltines ‘n an ice cold Bud Light.

If I’m gonna keep on hurtin’ myself like this I might as well start goin’ back ta Golden Corral.

I like 'em this way but some times add a piece of polish or a Hamburger patty, or even a cob of corn

Yer remindin me of an old favorite I ain't had in years.
Fried cabbage!  Dang it's good, specialy with some ground beef er one a them Loosianna hot links thrown in.  Salt 'n' pepper and yer good ta go.  If ya never had it, fried cabbage don't taste like cold cabbage or even boiled.  It's a poor man's meal, but sure don taste like it even as a main course ;D

We had some German folks that made something like a saugage roll. They fixed cabbage, onions, and seasoned ground beef. They would put the mixture in hot roll dough and bake them.  Man, they were good.

Jackie makes Beerox,  it's a rolled up sausage/beef roll,  it's really good.

BEEROX

1 loaf frozen wheat bread dough, thawed
1 lb. ground meat, browned and drained
1 lb. ground hot sasuge
1 sm. head cabbage, grated
1 sm. onion, chopped
1 cup cheese
Garlic, coriander, cumin, salt, and pepper

cook the  above ingredients and drain. Roll out 1 loaf of frozen wheat bread dough. Spoon filling onto bread; sprinkle with grated cheese and roll up.  Jackie makes them individually instead of the whole thing.

Place on greased cooking sheet, seam side down. Let rise 1/2 hour. Bake at 350 degrees for 30 minutes. Brush with melted butter.
