Flour-weight or measure????

How much is a cup of flour supposed to weigh? I know you can get different weights from a cup of flour depending on flour that has settled in the bag or if you fluff it up before you dip it out. I would also think that different types of flour would weigh different. How much of a concern should there be for flour that is weighed versus dipped, settled or fluffed?

I have that information at home, but not at work.  Yes Rye, whole wheat and white flour all weigh out different.  Flour does not really pack when it settles very much.

Will try to get back on this later tonight, after I've had my supper of course. ;)

Here is the chart on weight vs volume.

1 pound of egg………………………………..............   10 medium eggs
1 ounce of butter or lard………………………………1 tablespoon
1 pound of butter or lard……………………………..   2 cups
1 ounce of  spice………………………………...........   2 tablespoons of ground spice
1 oz of salt………………………………....................   2 tablespoons
1 ounce of white sugar………………………………..   2 tablespoons
1 pound of white sugar……………………………….   2 cups
1 pound of brown sugar………………………………   2 ¼ cups firmly packed
1 pound of confectioners sugar……………………….   2 1/3 cups
1 pound of raisins or other dried fruit………………..   3 cups
1 pound of  apples………………………………........   3 medium or 3 cups sliced
1 pound of cheese……………………………….........   2 cups
1 pound of uncooked rice…………………………….   2 cups
1 pound of ground coffee…………………………….   80 tablespoons
1 pound of white flour………………………………..   4 cups   
1 pound of whole wheat flour………………………   3 ½ coups
1 pound of rye flour………………………………......   4 ½ to 5 cups
1 pound of  corn meal………………………………...   2 ½ cups



As with any baking  involving flour, the amount needed can vary with the moisture content of the the flour and the starch/gluten content.  As with all recipes the amount of flour can vary a bit and the final dough/batter consistancy should be the final guide.
