Slim, you didn't waste any time making that up, I hope ya enjoyed it,  let me post your dessert. these are really good. 


SOPAPILLAS   

2 c. sifted all-purpose flour
2 tsp. baking powder
1 tsp. salt
2 tbsp. shortening
2/3 to 3/4 c. cold water
Cinnamon sugar
Honey
Oil or shortening

Sift flour, baking powder and salt together into a bowl. Cut in shortening until mixture resembles coarse crumbs. Sprinkle water over top and work in gradually until dough will just hold together, like pie pastry. Turn out on a lightly floured surface and knead gently about 30 seconds. Roll out thin as possible. Cut into 2 inch squares.
Fry one or two at a time in 365 degree oil or shortening, turning until puffed and golden brown on both sides. Drain on absorbent paper. Sprinkle with cinnamon sugar while still hot or dip in honey. Makes 2 1/2 to 3 dozen.

OT, I've had those Sopapillas before.  They're purty tasty.

Heres the one I have,

Indian Fry Bread

3 cups flour
1 TB baking powder
1/2 tsp. salt
1 cup warm water

Combine dry ingredients in a bowl. Add warm water in small amounts and knead
dough until soft but not sticky. Adjust flour or water as needed. Cover bowl
and let stand about 15 minutes.

Pull off pieces of dough (size of eggs) and roll out into thin rounds. fry
rounds in hot oil until bubbles appear on the dough, turn over and fry on the
other side until golden.

Serve hot with butter or honey brushed on top or sprinkle with cinnamon
sugar.

Oh my.  Them recipes look yummy.  Thanks OT for that Sopapilla recipe for dessert.  I know Mel is going to love it as well.  Should go great with my homemade horchata. ;)
