Something for Christmas

My daighter doesn't like cloves or candied fruit.  This is waht she came up with when she tinkered with my grandmother's and mother's boiled fruitcake recipe.

Merry Christmas

ANGELA’S NOT QUITE FRUIT CAKE

3 CUPS WATER

1 CUP SHORTNING OR BUTTER

2 CUPS  GRANULATED SUGAR

2 TSP CINNAMON

2 TSP VANILLA

2 TSP GROUND NUTMEG

1 TSP SALT

1 PKG. SUNMAID DRIED FRUIT MIX

MIX INGREDIENTS IN LARGE  PAN.

BOIL INGREDIENTS FOR A FEW MINUTES, THEN LET COOL TO LUKEWARM.

SIFT TOGETHER:

3 CUPS FLOUR

1 CUP NUT MEAL (I used almond, but I don’t see that it would make any difference if you used hazelnut.  I got it at Trader Joe’s, but it’s around other places.  If you can’t find it, go ahead and  use 4 cups of flour.)

2 TSP BAKING SODA

ADD IF DESIRED:

2 CUPS CHOPPED WALNUTS or PECANS

MIX ALL INGREDIENTS ABOVE  TOGETHER AND STIR THOROUGHLY.

BLEND IN 1/2 CUP APPLESAUCE

PUT IN GREASED LOAF TINS OR WHATEVER.

BAKE FOR 1 HOUR AT ABOUT 325-350 FAHRENHEIT

LET COOL THOROUGHLY

As long as Collin Street Bakery is in Coriscana, I won't have to worry about trying to bake a fruit cake. I will agree with Brother Tensleep, the receipe does sound good.

I tried this recipe when Forty first posted it a couple years ago.  It is a good one.  The neat thing about it is that you can use "regular" dried fruits instead of the candied fruits, some of which do taste a might nasty.

My first attempt was with dried papaya, pineapple and mango and used macadamia nuts for kind of an Hawaiian version.  Came out pretty good, but the original recipe did call for a bit too much cloves.  Gonna cut back on that the next go'round.  Also, plain dried fruits have way less sugar than the candied stuff, which is good for us that have the type 2.  ;)

Does anyone have my original recipe?  I seem to have misplaced it.  Thought it was in the Cowboy Cookbook, but don't find it there.

Hoi, Forty.  Good thing I made a hard copy.  ;)

MOM'S BOILED FRUIT CAKE

2 cups raisins
2 cups dates
3 cups water
1 cup shortening or butter
2 cups granulated sugar
2 tsp cinnamon
2 tsp cloves
2 tsp ground nutmeg
1/2 tsp salt
2 small jars fruit mix (or cut up gum drops.  If using gum drops, DO NOT boil them.)

Mix ingredients in a large pan.  Boil the ingredients for a few minutes, then let cool to lukewarm.

4 cups flour
2 tsp baking soda

Sift these 2 ingredients together.

2 cups chopped walnuts, pecans or cashews.
2 cups gum drops (see above)

Mix all ingredients above together and stir thoroughly.

Add 2 tsp lemon juice and stir in.

Put in greased loaf tins.

Bake for 1 hour at about 325 to 350 degrees.

Mix the ingredients or change them around.  I made some with almonds (my daughter has negative reactions to pecans and walnuts), left out the fruit, left out the cloves, double the fruit, used tropical fruit, used ameretto in place of vanilla, one with no nuts at all, etc.  Very versatile stuff.

First time I posted this someone (Annie Lee Independent???) used fresh fruits and home made preserves and it turned out very good.
