Another perfect pot roast

Del: Followed your Pot Roast 101 recipe again yesterday with a seven bone roast, and had to fight off the crowds when I finally opened the lid. Kind of let the taters go too long, but heard nary a complaint. Thanks for your continuing inspiration.
