There are 2 different magazines with flat bottoms offered.  Which is the preferred one to use?

Unless things have changed you cannot have an extended baseplate on a WB magazine. The seated magazine fits flush to the bottom of the grip of the pistol. My s/s McCormick mags have 2 screw holes for plastic base pads but the holes don't matter. Doesn't matter either if they're blue or stainless. If you decide to try IPSC some day just screw some pads on them and rock and roll. The pads do make it easier to get a good seat for a fast reload.
The Shooting Star classic would probably be what you would want for a full sized 1911, either blue or s/s. I live in eastern NC where things rust, I love stainless. Compact 1911s are not WB legal.

Yes, standard.  I have 2 1911's one is a box stock 1st yr production Series 70.  The other is a factory tricked out stainless Colt Commander.

Howdy Joe.  I'm guessing you are asking about the 7-rd vs. 8-rd models.  I really don't think either works better, and for WB new 7-rd mag thing the 8-rd doesn't offer any advantage.  But if it was me I'd pick 8 over 7 and stainless over blued.  Would have no problem with any of them, although I do have one 7-rd blue that has had the bottom plate come loose.
