I still think fried green tomatoes made the up-in-the-hills way from West Virginia where my mom's family
is from are best:

slice the tomatoes of course
flour them, nothing else, just plain flour
cook in a cast iron skillet using old fashioned Crisco

don't cook on too high a heat, once or twice and you will be able to figure it out

the flour will brown and form a rue, and a coating on the tomatoes

drain on folded paper towels,

salt and pepper to taste

best served with fresh cooked sweet corn on the cob, but you can pair them up with zucchini fried the
same way

potatoes, green peppers and onions fried together in a cast iron pan of couse

fried chicken

I only eat this way during the month of August, it is my treat for the year. Sometimes I get green
tomatoes in the winter from the grocery, but eating like that all year would make your heart scream
